In this recipe I want to show you one technique that I picked up from a chef I know for slicing their tender meat so that when fried it forms into tubes that look like Christmas tree cones.

He, of course, did it more elegantly, I did it at home. You can also try this cutting option, it looks great. Instead of thin strips, the meat turns out voluminous. Well, it’s also just incredibly delicious! Let's cook. 😉

Ingredients

  • Frozen squid – 600 gr
  • Onion - 1 pc.
  • Flour - 80 gr
  • Lemon juice - 1 tbsp. l
  • Salt, pepper - to taste

I defrosted them gradually at room temperature. These are how beautiful they are lying here.

They are covered with a thin skin that needs to be removed. Doing this with your hands is a thankless task, so I suggest resorting to a proven method - scalding.

To do this, take a suitable container and pour boiling water over the meat. They will immediately turn white before our eyes and the skin will peel off on its own.

We drain the boiling water and fill them with cold water; some people add ice to it, but I think this is unnecessary - and this way everything is cleaned perfectly.

By simply rubbing your hands under running water, you can remove any remaining films if they remain somewhere.

The skin has been removed, now it’s time for the insides - they also need to be removed. To do this, we cut the carcass and take out everything that is inside.

Especially don't miss the chitinous rod! This is a thing that stretches from the very bottom to the top inside the carcass, and looks a lot like a plastic stick.

It comes out very easily: you just need to pull the edge. Very carefully, we take it all out, sometimes they break and we have to look for all the pieces.

This is what a cleaned carcass looks like. You can wash it again.

I cut the carcass itself in half. These are the pieces you get. Each piece has two sides: one is tender and soft, the other is denser and tougher.

So, on the soft side we make cross cuts, not too deep, first in one direction, then in the other.

The result is a mesh pattern. You need to cut with a sharp knife, slowly, not all the way, because there is a risk of cutting through a slice of meat.

Now, when the meat is fried, these slices will curl into tubes and the pattern will become clearly visible.

I placed the prepared meat on a plate. There I will salt it and sprinkle it with lemon juice.

You can add pepper to taste.

Cut the onion into half rings. I have a small onion, if you really like onions, you can take more.

Sift 80 grams of flour into a separate bowl. By the time of deboning, the squid has already been salted, peppered, and sprinkled with lemon.

Dip the meat in flour. And at the same time put the onion in the pan and start frying it.

When the onion turns golden, add the meat to it. And, stirring, fry for two minutes over moderately high heat.

Our goal is for the meat to have time to brown, the flour to create a delicious golden crust, but for the squid to not have time to become rubbery.

The longer the squid is cooked, the tougher it becomes.

Therefore, we fry for a total of no more than two to three minutes. The smell is amazing!

When the time is up, turn off the stove and immediately remove it from the hot burner so that the process does not continue.

Place the finished squid in a separate bowl and serve hot.
