Grinding sprouted grain for the preparation of feed mixtures

This work reflects the urgency and state of the problem of obtaining vitamin feed based on germinated grain. The processes of grinding are considered and the design of the germinated grain crusher is justified. The results of experimental studies to determine the chemical composition of germinated grain are presented. The technology of obtaining a feed mixture based on sprouted grain is considered, in which one of the most important operations is grinding sprouted grain to the required size. A technique for choosing the design parameters of knives for grinding germinated grain is proposed. The calculation relations are based on the theory of V.P. Goryachkina on the energy consumption for cutting. The ratios connecting the angle of sharpening of the knife with the thickness of the knife blade and the initial height of the layer are obtained. The thickness of the knife blade and the thickness of the compression layer are tied to the strength properties of the material, which makes it possible to optimize the parameters and dimensions of the working bodies of the secondary crusher apparatus.

Barley groats have a rich set of useful properties and substances necessary for the body. This is one of the most ancient cereals cultivated by man. It is used in cooking, feed and technical purposes, as well as in the brewing industry.

Description of the plant

A whole genus of cereal plants is hidden under the name Barley, but common barley is most often grown for food purposes. Other representatives of this genus are rarely cultivated, more often they grow wild. Barley varieties are classified as annual, biennial and perennial grasses.

Barley, along with wheat, is considered one of the very first cereal plants that humans began to cultivate and eat. It happened in the Middle East at least 10 thousand years ago. He has a fairly large habitat - from Crete and the northern coast of Africa to the Tibetan mountains.

Archaeological finds confirm the wide distribution of barley as a cereal culture, not only in Asia, but also in Egypt during the time of the pharaohs, ancient Greece and the Roman Empire. It was also grown in the northern countries - Norway, Finland.

Beneficial features

Barley groats are grains of an annual plant. Due to its unpretentiousness, barley groats were considered cheap and unprofitable, so in the Middle Ages it was replaced by more expensive wheat. And although barley has enormous useful properties, porridge from it has lost its popularity, it has come to be considered a fodder product, an affordable peasant dish.
Porridge made from barley retains almost all the beneficial properties of this cereal, since the grains are minimally processed. Therefore, it is rich in fiber, ahead of even oatmeal in its quantity, which is considered the recognized leader in this matter.

Soluble fiber can significantly improve the general condition of the body, reduce cholesterol and blood sugar. These properties make barley cereal very useful for those who are prone to rapid weight gain and seek to normalize it.

The composition of barley is very harmoniously balanced, it contains a lot of plant proteins, carbohydrates, vitamins E, PP, B4 and B6, as well as trace elements:

  • potassium;
  • calcium;
  • iron;
  • phosphorus;
  • copper;
  • chromium;
  • manganese;
  • zinc.

Such a rich composition provides barley grits with the highest nutritional value among other food grits - 324 kcal per 100 grams.

The carbohydrates that make up barley seeds are so-called long-term carbohydrates, which fully saturate the body and give a feeling of fullness for a long time. They are absorbed for a rather long time, therefore they do not cause a sharp increase in blood glucose levels, therefore it is useful to include barley groats in the medical or dietary menu for diabetes mellitus, significant physical exertion.

The trace elements contained in barley bring many benefits to the body as a whole, strengthening bones and blood vessels, participating in the process of hematopoiesis. Also, the composition of the grains includes lysine - this is an amino acid available to humans only from plant foods. Its properties include stimulating the production of its own collagen and supporting the immune system.

Barley broth has significant enveloping properties, which makes it very useful for various diseases of the gastrointestinal tract, characterized by irritation of the mucous membrane. It also has a tonic and tonic effect on the body, which is especially necessary during the recovery period after serious illnesses.

Contraindications

Barley in any form is good for the body, but in some cases it can also be harmful. Contraindications to its use are gastrointestinal diseases in the acute stage.

Although barley dishes can help you lose weight, overusing them can have the opposite effect - rapid weight gain. Therefore, it is better to include barley in the menu about 1-2 times a week.

Important! Barley contains up to 22.5% gluten, so it should be excluded from the menu for those who suffer from intolerance to this substance or celiac disease.

Application of barley grains

Barley groats are gradually gaining popularity again among those who monitor their diet and health. Although most people perceive barley grits only as a product for making porridge, you should know that malt, decoctions, and coffee drink are also made from barley.

Barley porridge

What kind of cereal is made from barley? Surprisingly, two whole types of cereals are made from the grains of this cereal - barley and pearl barley. The difference lies in the way the grain is processed, which affects the beneficial properties of the resulting cereal.

Barley grits

Crushed barley porridge is usually called barley porridge. In this case, the grains are not polished, only broken into small pieces. This allows them to retain the bulk of their fiber. At the same time, yak porridge turns out to be softer than barley, therefore, it is suitable for children's and dietary rations. Another advantage is its lower cost.

The beneficial properties of barley grits include:

  • the ability to alleviate allergic reactions;
  • an enveloping effect, useful in diseases of the gastrointestinal tract;
  • anti-inflammatory, diuretic properties;
  • the highest content of vegetable fiber among other cereals, which contributes to the maximum absorption of nutrients and a long-term feeling of fullness.

In barley, there is a lot of protein-containing gluten, as well as essential amino acids.

Pearl barley

Barley is a polished whole grain of barley. They are divided into large and small fractions. Small pearl barley is absorbed a little easier, boiled faster. It is used for cooking soups, cereals, cutlets and casseroles. Porridge is also cooked from large barley, but more crumbly, be sure to pre-soak the cereal for several hours in cold water.

Barley porridge is very similar in its useful properties to barley porridge. Their main difference is the method of processing, as a result of which barley loses some of its fiber.

The classic recipe for barley porridge

There are many ways to cook barley porridge. Barley is usually cooked from 1 to 2 hours, barley grits - only 40-45 minutes. Properly cooked porridge will surprise with its rich taste and will become one of the family's favorites for a long time.

  1. Be sure to rinse the groats in cool water to remove debris and dust.
  2. To make the barley porridge cook faster and the grains are softer, the cereals are pre-soaked for several hours. Ideally, it is left in water overnight, observing the proportion - a liter of cold water is taken for 1 glass of cereal.
  3. Barley groats are perfectly complemented with milk, so after soaking it is poured with 2 glasses of milk for crumbly porridge and 4 glasses for viscous. In the classic recipe, the porridge was left to simmer in a water bath for 6 hours. Using a multicooker, you can shorten this process to 40 minutes.
  4. Season the finished porridge with butter. Barley loves it very much, the more oil is added to the porridge, the brighter its taste will be. This is the case when "you can't spoil the porridge with butter."
Barley porridge on the water goes well with mushrooms, meat, cracklings, fish or vegetables. Most spices and fresh herbs go with it.

Barley malt

Certain requirements are put forward for malting barley, both to its external features and to its technological properties. The first group includes the following indicators:

  • the barley from which the beer malt will be made should have a uniform light yellow or yellow color. Green color indicates unripe grain, and dark yellow, interspersed with black or brown - about improper storage. Most likely, such barley was soaked or infected with microorganisms, due to which it lost its germination and malt qualities;
  • the smell of high-quality barley should not contain any impurities of rot or mold. As a rule, it is quite fresh, slightly reminiscent of the smell of straw. To hear it, you need to warm a few grains in the palm of your hand, and then grind them;
  • grain purity is determined by the absence of impurities (damaged or diseased grains, other grains, weed seeds, etc.) and pests.

The technological characteristics include the germination of grains, moisture and protein content, as well as extractiveness - the amount of substances that pass into solution as a result of processing.

You can also make malt from barley at home. Sprouted barley can be used as a food supplement or as a raw material for home brewing.

First of all, you need to check the purchased cereals for germination. For this, from the total mass, about a hundred of the largest grains are selected and poured with a glass of water. The floating instances are replaced with new ones until all are drowned. Then the barley is laid out on a cloth, covered with wet gauze and left warm for 2-4 days. After that, you need to count how many grains have not sprouted. Each will be equal to one percent. If the total germination rate is more than 90%, then the raw material is well suited for creating malt.

To prepare malt, it is important to rinse the barley well and separate all floating grains, as well as debris and impurities. Then the remaining raw materials are poured with water 5 cm above the grain level and left for 14 hours. In this case, after 7 hours, the water must be replaced with fresh water. At the end, you can disinfect the grain by pouring it with a weak solution of potassium permanganate for 1-2 hours.

After disinfecting the barley, the grains are laid out in a thin layer (4-5 cm) on pallets.

They need to be stirred every 2-3 hours. After a day, it is covered with a damp cloth and left in a warm room (15-20 degrees). The grains are mixed and moistened every day. The malt is done when the sprouts are 1.5 times the length of the grain. Its shelf life is only 3 days. You can increase it by drying the malt.

Before drying, it is again treated with a solution of potassium permanganate (per 1 liter of water - 0.3 g of potassium permanganate) for 20 minutes. Then the malt is dried at a temperature not exceeding 30-40 degrees. A well-ventilated attic or a warm room with a fan is suitable for this. Drying takes 3-4 days, after which the sprouts are removed from the grains, rubbing them between the palms, and sent to storage in linen bags.

Coffee drink

A very tasty coffee drink is obtained from roasted and ground barley and rye grains. It can serve as a complete substitute for coffee in cases where caffeine is contraindicated. This drink is very useful, as it retains most of the properties of barley and rye.

It can be used to improve digestion, reduce weight, prevent diabetes and improve overall health. At the same time, barley coffee, unlike ordinary coffee, does not contain caffeine, therefore it does not excite the nervous system. Thanks to this, it can be drunk at any time of the day and at any age.

The barley coffee drink has no contraindications, it can be consumed even during pregnancy and lactation, if there is no individual intolerance.

Making such a drink at home is not at all difficult. To do this, fry the grains of barley and rye in a hot dry frying pan, then grind. From the resulting powder, you can brew coffee according to the following recipe:

  • 1 tbsp. l. powder;
  • 150 ml of water.
The powder is poured into a Turk, poured with water and boiled for 2 minutes, after which it is allowed to brew under the lid for the same amount. For a richer color, you can add half a teaspoon of ground chicory to the coffee blend.

It is interesting! As already mentioned, barley goes well with milk, so you can replace the water in the recipe with milk by a third or add it to a ready-made drink. This will brighten and soften the taste.

Cream, honey or sugar are also added to the finished coffee to taste.

Despite unfair oblivion, barley grits are gradually regaining their place in cooking. Its beneficial properties and rich composition make this cereal one of the most valuable plants for nutrition, which must be included in the diet, not only for treatment, but also for the prevention of many health problems.

What is the difference between barley and pearl barley? Why is barley porridge so useful, what is its calorie content ?!

The content of the article:

Barley groats are crushed barley. Those who do not know what barley grits are made of will now be in the know. After crushing, the groats are assigned a certain number depending on their size (No. 1, No. 2, No. 3). Barley groats differ from other groats in that they are not divided into varieties. The kernel of barley is not polished, therefore more fiber is stored in it, it is freed from flower films, cleaned of organic and mineral impurities.

Pearl barley is considered a polished grain of barley, from which the entire flower shell and part of the aleurone layer are removed. That is why barley does not have the beneficial properties of whole grains and whole-grain cereals, which cannot be said about barley!

The homeland of barley is Asia. In the wild, it can be found in Lebanon, Turkey, Syria, Central Asia and the Caucasus. Barley is known for being superior to other grains for its simplicity and early maturity. It is not for nothing that they say that “barley gives strength and strengthens memory”, and “barley porridge is the most delicious, high-calorie and spore”!

  • Barley began to be cultivated as early as 4000 years BC.
  • Not so long ago, on the territory of Jordan, archaeologists were able to find a grain of barley 11 thousand years old, which makes it possible to compare the age of barley with the age of wheat.
  • A grain of barley was once used as a measure of length and weight. Five grains of barley, peeled, corresponded to an Arabic carat weight of 0.2232 g. And three kernels of barley were equal in length to one English inch (2.54 cm).
  • Even the famous ancient philosopher Avicenna, who lived in 980-1037, said that barley has cleansing properties, it removes toxins and toxins from the body, and neutralizes allergic reactions.
  • While soaking barley in plain water, scientists discovered the antibiotic substance hordecin, which heals fungal growths on the skin.
  • In ancient times, barley was used to treat colds, mammary glands, and stomach diseases. The patient's body was covered with boiled barley, which indicates the softening, anti-inflammatory, enveloping, antispasmodic properties of this cereal, which have been known to mankind since the past.

Composition of barley porridge: vitamins and minerals

Barley groats are a source of vitamins and minerals most useful to our body. It contains B vitamins, vitamins A, PP and microelements - silicon, phosphorus, fluorine, chromium, zinc, boron. Grain is enriched with potassium, calcium, copper, iron, magnesium, nickel, iodine and other useful minerals.

A grain of barley consists of 5-6% fiber, which is so necessary for our stomach and intestines. It helps to normalize digestion and eliminate all harmful decay products from the body. In terms of its nutritional value, protein in barley is superior to wheat and, unlike animal protein, is absorbed in the human body by almost 100%.

Calorie content of barley per 100 g of product is 324 kcal:

  • Proteins - 10.4 g
  • Fat - 1.3 g
  • Carbohydrates - 66.3 g
  • Coarse fiber - 13.0 g

As you can see, this porridge is very nutritious, it is not - 53 kcal.

Useful properties of barley

Why is barley porridge so good? The most important thing is that it can be used for dietary and baby food, as it is softer and softer than pearl barley. And it costs not so much, but how useful it is! If you try to regularly prepare it for the whole family, you can significantly improve your health and, moreover, save your family budget. So why are barley grits so healthy? Here are some facts:
  1. Dishes made from barley grits help our body cope with allergic reactions.
  2. The enveloping, diuretic and anti-inflammatory properties of barley are used in the treatment of obesity and diabetes mellitus.
  3. It has good taste and high calorie content. Modern nutritionists say that it is best to use barley soups and cereals for people who are overweight, bowel disease, and constipation.
  4. The high fiber content ensures that barley porridge is better absorbed than other cereals. At the same time, the sugar level in a patient with diabetes does not increase and a long-term feeling of satiety is created, which helps to cope with excess weight.
  5. Barley is rightfully called the champion in the content of protein-containing gluten, so it is always recommended for making dietary cereals and soups.
  6. It is widely used in traditional medicine, using a beneficial decoction of barley, which relieves pain in arthritis. In the postoperative period for inflammatory diseases of the stomach and intestines, porridge and soups from this cereal are an excellent general tonic.
  7. Barley porridge normalizes the activity of the endocrine system and the urinary tract. It helps to cope with depression, stress and bad mood.
  8. Barley contains a large number of amino acids: for example, lysine promotes the production of collagen, which smooths out wrinkles and slows down their appearance.

The history of the cultivation of barley, one of the most widespread cereals in the world, began its history in ancient times. Confirmation of this is the mention of this cereal in the Bible, as well as barley grains discovered during archaeological excavations of the cities of Ancient Egypt, Rome, Greece, Palestine, China, which existed for 4-5 thousand years BC. (on the territory of present-day Russia, barley has been grown for over 5000 years).

From the grains of barley, unpretentious to the growing conditions, in ancient times, flour was obtained from which bread was baked, but also barley grains already 2 thousand years BC. served as the main raw material for obtaining malt (sprouted and then dried grains of barley), which is widely used in ancient brewing and distilling. In those immemorial times in the countries of the ancient world, it was believed that food and drinks made from barley grains contribute to strengthening endurance, strengthening physical and mental strength (this is why barley food prevailed in the diet of both ancient Roman gladiators and students of the legendary philosophical school of Pythagoras ). In Russia, barley has long found the widest culinary use - the germinated grains of this cereal were the main raw materials for making kvass, beer, barley vinegar, baked goods, and decoctions from barley grains in Russian cuisine were used in the preparation of soups, cereals, jelly and broths.

From ancient times to the present day, barley grains, as well as decoctions and infusions based on them, which have a high nutritional value and a lot of properties useful for the human body, have found various applications in folk medicine. The famous Avicenna wrote about the cleansing and fortifying effect on the human body of decoctions of barley grains in his treatises. For a long time, in many countries of the world, decoctions and infusions based on barley grains and barley malt have been used in the treatment of diseases of the kidneys and bladder, respiratory organs, are used for various diseases of the gastrointestinal tract, diseases of the mammary glands (in addition, specially prepared barley water is considered popularly an effective remedy for enhancing lactation and combating fever, and is also used to feed infants). Also, this cereal crop is quite often used as a raw material for the production of coffee surrogates, the production of cereals, and is used in the pharmaceutical industry (the bactericidal preparation hordecin is obtained from barley grains).

Barley grain composition

The composition of barley grain is distinguished by an optimal ratio of proteins (up to 15.5%) and carbohydrates (up to 75%) (moreover, in terms of its nutritional value, barley protein is significantly superior to wheat protein).

The composition of the grain of barley contains a relatively small amount of starch (compared to rye, wheat, peas, corn) and enough fiber (up to 9%) (in terms of its quantity, barley surpasses most of the known cereals, second only to oats).

The composition of barley grain (as well as the composition of oat grain) is characterized by a high content of water-soluble dietary fiber beta-glucans, which help cleanse the body of harmful substances and reduce blood sugar and "bad" cholesterol levels. It is due to the low starch content and a significant amount of beta-glucan fibers that cereals produced from barley and oat grains have, from the point of view of nutritionists, a clear advantage over other cereals (wheat, rye, buckwheat, etc.), and in this regard, they can apply for the title of the most useful dietary food.

The composition of barley grain contains water-soluble vitamins of group B (B1, B2, B3, B4 (choline), B6, B8 (biotin), B9) necessary for human health, fat-soluble vitamins E, A, D, as well as a wide range of useful macro- and microelements (silicon, phosphorus, potassium, calcium, magnesium, nickel, sulfur, manganese, selenium, iodine, zinc, bromine, copper, cobalt, chromium, fluorine, etc.).

Complex of B vitamins contained in barley grain takes an active part in many processes in the human body (energy, protein, fat, water-salt metabolism, the process of hematopoiesis), regulates the functions of the nervous, cardiovascular, muscular and digestive systems, contributes to the maintenance of normal hormonal balance in the human body.

Vitamins A, E and D in the composition of barley grain in combination with B vitamins contribute to the full growth of the human body, normalize vision, improve the condition of cartilage and bone tissue, skin, mucous membranes of internal organs, and also play a significant role in strengthening immunity, preventing infectious and oncological diseases.

A distinctive feature of the mineral composition of barley grain is the increased content of phosphorus, silicon and potassium (you can learn about the beneficial properties of these very important macroelements for the body in the section "Barley").

Barley also differs from most of the known cereals by the increased content of antiviral and antibacterial substances such as lysine and hordecin. In this regard, barley broths and infusions are a well-known remedy in folk medicine for the treatment of fungal and inflammatory skin diseases, diseases of the digestive system and respiratory organs, and barley grains are used as raw materials for the production of bactericidal and antiviral pharmaceuticals.

Features of the biochemical composition of germinated barley grain

In the process of germination in barley grain, the activity of enzymes is activated that contribute to the breakdown of nutrients (proteins, fats, carbohydrates) into simpler in structure and easily assimilated by the human body organic components (proteins are converted into amino acids, fats - into fatty acids, starch - into protozoa saccharides). Thus, when eating sprouted barley grain or barley malt with a therapeutic and prophylactic purpose, the human body spends much less energy to assimilate nutrients than when using traditional food products made from non-sprouted barley grains (barley and pearl barley, barley bread) ...

A characteristic feature of sprouted barley grain is also a higher content in it (in comparison with ripe, unsprouted barley grain) of vitamin E and B vitamins.
