How to make a cookie cake with cottage cheese and gelatin


  1. The first step is to prepare the cream. To do this, I combined cottage cheese, sour cream and sugar in a deep bowl. I blew it all together until smooth with an immersion blender. If you don’t have special equipment, then grind the cottage cheese through a sieve so that there are no grains.

  2. After whipping with a blender, a gentle and homogeneous cream was obtained. It is quite liquid. To thicken, add gelatin. I diluted 1 tablespoon of gelatin powder in warm boiled water, let it swell and heated it in the microwave (do not boil!). Warm, but not hot, gelatin was filtered through a sieve and poured into the cream in a thin stream, beating with a blender. Cookie cake cream is ready!

  3. It remains to collect the cake. You will need a shape with sides, preferably rectangular or square. To make it easier to take out the finished cake, I lined the bottom and walls with cling film. Lay the first layer of cookies on the bottom. 6 pieces fit into my mold (if you wish, you can make a larger cake, from 8 cookies in each layer, the cream will be enough).

  4. Top cookies covered with cream - about 1/3 part. Spread it out with a spatula.

  5. Then she laid out the cookies again. And repeated the layers until the products ran out. I got 3 layers in total. Sprinkled with crumbs on top. I sent the form to the refrigerator for the night so that the cream completely hardened and all the “cakes” were soaked.

  6. Dessert is very easy to remove from the mold. If desired, it can be additionally decorated, for example, with chocolate-covered raisins or nuts.

Despite the existing variety of all kinds of cakes, I really like simple biscuit and cottage cheese cakes. By this I mean cakes without baking, in which cookies are layered with cream based on cottage cheese.

The number of cookies depends on its size, I took the "Leningrad" one in the form of rectangles, and it took 32 pieces, if the cookies are larger and square, then it will take less on the cake. Usually cookies are dipped in milk, it is very tasty, but you can experiment and dip cookies in cocoa or coffee.

All sorts of fruits and chocolate glazes are very much in theme with curd cakes. For this option, frozen cherries and fresh oranges are taken. Prepare the icing to your taste, for example, just melt one or two chocolate bars in cream or milk. Glaze made from sour cream, sugar and cocoa is also good, which are taken in 5 tablespoons each, they need to be mixed and heated to a glossy state.

To prepare a cake from cookies and cottage cheese without baking, prepare the ingredients according to the list. In the photo there is a chocolate bar that I somehow didn’t like for glaze ...

Make a sweet coffee with condensed milk, pour it into a suitable bowl or container to dip the cookies into.

Choose the appropriate size form in which the cake will be assembled. You can do without a form, but in it I personally get smoother))

Line the pan with foil or parchment paper.

For cream, first mix sugar with softened or melted butter. Adjust the amount of sugar according to the sweetness of the cookies.

Mix the sugar mass and vanilla sugar with cottage cheese.

Add desired amount of sour cream. For dense cookies, prepare the curd cream thinner, and for crumbly sugar shortbread cookies, thicker.

Divide the resulting cream into three equal parts, to do this, simply draw three lines along its surface with a knife or spatula from the center to the edges.

Moisten the first part of the biscuit in coffee, i.e. for the first bottom layer.

Lay the cookies in one layer and cover them with a third of the curd cream. The cream needs to be smoothed out.

Do the same for the second and third row of cookies and cream. The last fourth layer should be cookies. Let the cake stand at room temperature for 30-40 minutes to soak the cookies, then place in the refrigerator until serving.

Decorate the cake to your liking. This time I wanted to cover the cake with chocolate icing with fruits.

To do this, warm chocolate icing was mixed with orange pieces and defrosted cherries, from which the juice was drained.

Place the resulting chocolate mass with pieces of fruit on the surface of the chilled cake.

To make the cake look not so gloomy, you can sprinkle it with ground nuts or crumbled cookies ...

The no-bake biscuit and cottage cheese cake is ready to serve both with the icing uncured and when it has hardened in the refrigerator.
