  • 200 grams of lightly salted red fish;
  • light sesame;
  • a mixture of white and black sesame;
  • raw carrots;
  • quarters of walnuts;
  • a bundle of a green beam;
  • greens (dill or cilantro);
  • sun-dried tomatoes;
  • pitted olives;
  • ground sweet red pepper;
  • pita.

Cooking method:

  1. First, we need to prepare the base of the holiday snack. To do this, grate hard cheese and eggs on a fine grater. Squeeze the garlic through a garlic press. Some housewives use processed cheese, but I prefer hard cheese.
  2. Salt, pepper to your taste, dilute with mayonnaise and knead. (Add enough mayonnaise so that the consistency of the mixture is suitable for sculpting balls).
  3. Divide the cheese-garlic mass into 5 parts.
  4. Pour 2/3 of the grated crab sticks into the first plate and add a spoonful of mayonnaise. Mix everything thoroughly. (Leave the remaining crab sticks for breading). Form balls with wet hands. They can be anything in size: I like small ones, so I use one teaspoon of the mass. Balls with such a filling can be decorated with finely grated chicken yolk or rolled in crab breading.
  5. Peel the cucumber, chop it into small cubes and add to the cheese mass. Then cut the red fish into small cubes. Similarly, we form cheese balls, and in the middle we hide a small piece of salted fish. We bread the finished balls separately in each type of sesame.
  6. Raw carrots need to be grated and mixed with cheese. We stuff such balls with a quarter of a walnut. For decoration we use pre-roasted and ground nuts.
  7. Then add very finely chopped fish and a green onion and half a spoonful of mayonnaise to the cheese with eggs. We use greens for decoration.
  8. To prepare the fifth version of the holiday snack: add chopped sun-dried tomatoes to the base. In the middle of each ball we hide the olive and breaded in paprika.
  9. Cut the pita bread into squares and dry them in a pan. The result is crispy crisps for the festive serving of our breaded cheese balls.

I recommend serving such an appetizer on a festive table cold. It turns out beautifully when you spread different types of cheese balls in strips on a large dish, and decorate the edges with crispy pita chips and sprigs of fresh dill. Here you can experiment as you like, as far as your imagination is enough. Be sure to try preparing such a festive appetizer on the table, you will not regret it.

Potato balls

Ingredients:

  • 800 g potatoes
  • 50 g butter
  • 1 raw egg for puree
  • red and black ground pepper,
  • salt to taste
  • 40 g wheat flour
  • vegetable oil for deep frying.

Cooking method:

  1. Without letting cool, rub quickly and thoroughly with a wooden pestle.
  2. Add pre-melted hot butter, raw egg, salt and pepper to taste, grind well again and stir.
  3. Shape the warm mashed potatoes into small balls.
  4. Dip them in premium flour.

Rice balls with cheese

Ingredients:

  • 1 1/2 cups long rice
  • 100 hard cheese
  • 1 glass of chicken stock
  • 1 onion,
  • 2 cloves of garlic
  • 100 g bread crumbs
  • 150 g flour.

Cooking method:

  1. Fry finely chopped onion and squeezed garlic in butter, when the onion is browned, add rice and half a glass of broth to it, simmer, stirring occasionally.

"Christmas balls" appetizer salad

Ingredients:

  • Leafy greens (salad) - 4-5 Pieces
  • Hard cheese - 100 Grams
  • Crab sticks - 200 Grams
  • Chicken Egg - 2 Pieces
  • Mayonnaise - 100 Grams
  • Black or green olives - 50 grams (pitted)
  • Salt, ground black pepper - To taste

Cooking method:

  1. So, prepare the food. Boil eggs, cool and peel. Free the crab sticks from the plastic bags. Strain the olives from the liquid.
  2. On the finest grater, grate the cheese, eggs and crab sticks. Set aside a third of the crab shavings separately to bread the balls. Add mayonnaise. Salt and other spices at will, I did not add anything, not even salt, everything was enough for my taste. Mix well.
  3. Roll balls from the cheese-crab mass, the size does not matter, make what you like. Mine are about the size of a walnut. Dip each ball in crab shavings.
  4. Place the balls on the lettuce leaves. Cut the olives into halves and put each half on a ball, press in a little. So the "Christmas balls" are ready.

Rice balls

Ingredients:

  • A glass of boiled rice
  • A can of canned fish in its own juice (I have pink salmon)
  • Boiled eggs - 3 pieces
  • Mayonnaise - 3 tablespoons
  • Bunch of dill
  • Raw carrots - 1 pc

Preparation:

  1. Mash the fish with a fork along with the juice. If there is a lot of juice, it is better to first drain part of it, then you can add it if you see that the mass is too dry.
  2. Grate the proteins on a fine grater. Grate the yolks separately on a fine grater or just chop well with a fork (that's exactly what I do).
  3. Mix rice, fish, proteins and mayonnaise, salt and pepper. Mix well.
  4. Grate carrots on a fine grater. Chop the dill.
  5. Cut the salad into balls, roll in herbs, yolks and grated carrots.

Curd croquettes (balls)

Ingredients:

For croquettes:

  • 500 g cottage cheese
  • 1 small carrot
  • 1/2 bunch of dill
  • a handful of chopped walnuts
  • 1 tbsp. l. vegetable oil
  • 1 yolk
  • 1 tsp cumin
  • a pinch of salt.

For vegetable salad:

  • 2 fresh cucumbers
  • 100 g radish
  • 1/2 bunch green onions
  • 1/2 bunch of parsley
  • lettuce leaves.

Preparation:

  1. Put cottage cheese in a bowl, mash with a fork. Add carrots grated on a fine grater, walnuts, chopped dill, vegetable oil, salt. Mix well.
  2. From the resulting mixture, mold croquettes into balls with wet hands, put in the refrigerator for half an hour.
  3. Put lettuce leaves on the dish, put cucumber and radish slices on top of the lettuce leaves, sprinkle with chopped green onions and parsley.
  4. Put curd croquettes on the prepared vegetable salad, sprinkle with grated yolk and caraway seeds.

Potato balls for side dishes

Ingredients:

  • Olives
  • Almond nuts
  • Dill

Preparation:

  1. Grate cheese (any) and add very finely chopped garlic.
  2. Then add a little mayonnaise to the mixture until a plastic mass is obtained, knead and mix well.
  3. Place almonds in the middle of each olives.
  4. Roll the curd into balls by placing the stuffed olive inside each ball.
  5. Wash the dill, dry very well and chop finely. The drier the dill is and the finer it is cut, the more convenient it is to bread the balls.

Crab rafaello

Ingredients:

  • Russian cheese - 200 g
  • Crab sticks (frozen) - 4 pieces
  • Garlic cloves - 2 cloves
  • Mayonnaise (so that the mass is of medium density)

Preparation:

  1. Grate cheese on a fine grater, add garlic squeezed through a press, mix with mayonnaise.

Vegetable snack balls

Ingredients:

  • Beets - 2 pieces
  • Carrots - 3 pieces
  • Low-fat cheese - 100 grams
  • Eggs - 2 pieces
  • Prunes - 50 grams
  • Nuts - 50 grams
  • Natural yogurt - 200 grams
  • Salt to taste

Preparation:

  1. Boil carrots, beets until tender. Cool, peel.
  2. Boil eggs, cool, peel. Separate the whites from the yolks.

  • cherry tomatoes - 150 g,
  • 2 cloves garlic (pressed through a press),

  • a fresh bunch of dill / parsley,
  • toasted sesame seeds - as needed.

Preparation:

  1. Chop feta cheese, mash with a fork, add cheese or softened butter, garlic, black pepper.
  2. Stir until smooth and form into balls.
  3. Prepared tomatoes should be placed inside the mass, gently roll into balls and roll in finely chopped parsley or dill.
  4. It is better to take dill (I know from practice), and then in sesame.
  5. Refrigerate for 30-40 minutes.
  6. The appetizer is ready.

Ham snack

Ingredients:

  1. Carbonade (or ham) 200 gr.
  2. Hard cheese 50 gr.
  3. Chicken egg 2 pcs.
  4. Garlic 1 prong
  5. Mayonnaise about 1 tablespoon
  6. Nuts to taste - about 70 grams of peeled - I took pine nuts, walnuts and almonds.

Preparation:

  1. Grate the carbonate on a fine grater.
  2. Hard-boiled eggs, cool, peel and rub on a fine grater.
  3. Pass the garlic through a garlic press.
  4. Grate the cheese on a fine grater.
  5. Finely chop the nuts.
  6. Stir the carbonate, cheese, eggs and garlic until smooth.
  7. Add very little mayonnaise to the resulting mass (it took me a tablespoon) and mix everything thoroughly again.
  8. Form small balls from the resulting mass.
  9. Sprinkle the balls with chopped nuts on all sides.

Snack "Cheese balls with grapes"

The snack "Cheese balls with grapes" will surely decorate your festive table!
But only if you love blue cheeses by themselves. For this recipe, I advise you to take either Dor Blue cheese or another blue cheese whose taste you like. It is better not to take risks and not take unfamiliar types of cheese that you have never tasted before. These cheeses are very specific and may not suit your taste.

Ingredients:

  • blue cheese (room temperature) 100 g
  • cream or curd cheese (room temperature) 100-150 g
  • a bunch of sweet large grapes (red or green) pistachios (peeled) 120 g

Cooking method:

  1. Prepare ingredients.
  2. Wash the grapes, dry and disassemble the bunch into berries.
  3. Carefully make an incision in each berry and remove the seeds.
  4. Put the Dor Blue cheese in a bowl, add the cream cheese and mix well.
  5. Tighten the bowl with the cheese mass with cling film and refrigerate for 40-60 minutes (the cheese mass will thicken in the refrigerator).
  6. Chop the pistachios with a knife or chop them in a blender (not too finely chopped).
  7. Gently stick the cheese mixture around each grape so that you get a ball.
  8. Dip the ball in chopped pistachios.
  9. Arrange the cheese balls on a platter, tighten with cling film and refrigerate before serving.

Cheese balls with grapes

Ingredients:

  • large sweet grapes
  • curd cheese (I have Carat with herbs) 140 g
  • blue cheese (Dor-blue) 40 g
  • pistachios (weight with shell) 120 g

Cooking method:

  1. Wash and dry the grapes, tear off the branches.
  2. It is better if the grapes are blue, this is more spectacular.
  3. I had red and pink. I pulled out the bones.
  4. I did not cut each grape completely.
  5. Combine blue cheese or other hot cheese and curd cheese. Refrigerate.
  6. Peel the pistachios and, if possible, remove the husks.

Ingredients:

  • 250 gr. hard cheese
  • 5 boiled eggs
  • 2-3 cloves of garlic
  • mayonnaise
  • salt and pepper to taste

Cooking method:

  1. Grate boiled eggs, garlic and hard cheese on a fine grater, add allspice, mayonnaise and mix well until a dense homogeneous mass.
  2. Taste it, add salt if necessary.
  3. The base for our cheese balls is ready, the mass should not be dry and not liquid, so that later it would be convenient to form the balls.
  4. Divide it into 5 separate pieces, and put it in different bowls.
  5. First, let's prepare the crab balls. We pour 100 gr into our base. finely grated frozen crab sticks, add a spoonful of mayonnaise and mix well. Another 100 gr. Set aside the grated crab sticks for sprinkling.
  6. To get beautiful crab shavings, it is better to grate the sticks frozen. The mass is prepared, we proceed to the formation of balls.
  7. It is more convenient to do this with gloves moistened with water, we use a teaspoon. We collect a full teaspoon of the mass and roll the ball with wet hands, breading each in crab shavings. We put the balls on a separate plate, this is what happened in the end.
  8. Now we start making another type of cheese balls.
  9. To do this, peel a small fresh cucumber from the skin, cut into a very small cube and add it to the main cheese mass, mix well.
  10. With the help of a teaspoon, we collect the mass in our hand, make a small depression in which we put a piece of any slightly salted red fish that you can afford.
  11. We make blanks for further sprinkling. And now we roll the prepared balls in a mixture of white and black sesame seeds, as well as in pure white sesame seeds.
  12. To prepare the third type of balls, add small raw carrots to the cheese base, grated on a fine grater, and mix well.
