If you have cottage cheese in stock, then it’s worth baking quick cheesecake. Essentially, this is a type of cottage cheese casserole, but thanks to the gravy and apples, the taste is delicate and pleasant. To prepare, we will need for the dough:

Cottage cheese 150 g

Butter 75 g

About a glass of flour (200ml),

Granulated sugar 100g (a little more than half a glass)

Baking powder for dough or, if the cottage cheese is sour, just soda 0.5 tsp.

Pinch of salt optional

Mix the softened butter with sugar, then add eggs and cottage cheese in succession, stirring each time until smooth. Pour in the flour last, scattering baking soda or baking powder on top. Knead the dough smoothly, roll it into a circle and place it in a low form so that sides are formed. For the filling, wash and peel the apples, cut them into thin slices and lay them beautifully on the dough in an even layer. For the gravy, melt 2 tablespoons of butter and 2 tablespoons of granulated sugar in a water bath. Pour the apples on top. Place the pie in an oven preheated to 180 degrees. Quick cabbage pie can be made with the same dough as the fish one; the filling can be made from either fresh white cabbage or boiled cauliflower or broccoli. The mass of cabbage for the filling is 500-600 g for the portion of dough indicated above. It is better if the white cabbage is young, summer. Just cut it into noodles, add salt and finely chopped dill and mix. If the cabbage is tougher, you need to rinse it well with your hands. Separate cauliflower and broccoli into inflorescences and boil until half cooked in salted water. Pour 2-3 tablespoons of melted butter over any cabbage filling. We spread it into the mold in an even layer, leaving a gap of about 1 cm to the edge, and fill it with dough on top. Bake at 180 degrees until browned.

Quick apple pie- this is a charlotte, also known to our mothers and grandmothers, usually called the “Guests on the Doorstep” pie. Ingredients:

Granulated sugar 1 cup (180 g)

Premium wheat flour 1 cup (160g)

2-3 apples

Bake in an oven preheated to 180-200 degrees until the top is browned. Do not open the oven while baking as the cake will fall. It is very difficult to give recommendations on time, since everyone's oven is different. Baking time is from 20 to 40 minutes. My mother did not have a high pan, she covered a regular frying pan with parchment, sprinkled it with lightly semolina, laid out the apples, and poured the dough on top. The cake baked very quickly and the taste was wonderful. She made the dough according to this recipe:

Easy quick pies

Easy quick pies can be prepared with ready-made puff pastry. It is available for sale in sweet and yeast form. I prefer to use unleavened puff pastry; somehow it didn’t work out with yeast dough. Adyghe cheese or homemade feta cheese are suitable fillings. The homemade cheese that is sold in our market is still more similar to Adyghe cheese than to feta cheese. It is quite fatty and has a distinct creamy taste, the saltiness may be more or less, but rather it is not too salty. For a package of puff pastry we will need about 300-400g of cheese (grate on a coarse grater), a couple of cloves of garlic and quite a bit of mayonnaise (I put it by eye, probably no more than 1-2 tablespoons, so that the grated cheese sticks together a little and does not crumble) . If the cheese is not salty, you can add a little salt. Chop the garlic and add to the grated cheese, mix with mayonnaise, and our filling is ready. Roll out the dough in a layer of no more than half a centimeter or even thinner. You can make a round pie, but it’s easier to cut a square one, because you can’t crush the puff pastry and roll it out again. We make two squares or rectangles according to the size of the baking sheet: one a little larger, the second a little smaller. Cover the baking sheet with parchment. Spread the filling evenly onto the dough, brush the perimeter with beaten egg, cover with the second square and pinch the edge. You can cut a sheet of dough into squares approximately 10x10 cm in size, put the filling on one side, brush the edge with egg, fold it diagonally and pinch. You will get triangular pies. Brush the top of the pie or pies with beaten egg and sprinkle with sesame seeds. Prick the surface with a fork in several places to allow steam to escape. Bake at 200 degrees until the dough has risen noticeably and is browned. When young garlic with herbs is on sale, it is very good to add finely chopped garlic greens inside; wild garlic is also suitable.

If you have honey and leftover kefir, perhaps not very fresh, then it’s worth baking quick honey pie. Products we will need:

100 ml kefir

5 heaping tablespoons of sugar

2-3 tbsp. spoons of honey (if the honey is candied - 2 heaped spoons, if liquid, then - 3 spoons)

About a glass of flour (the dough should look like unleavened pancakes)

1 tsp soda (do not extinguish, since honey contains a lot of organic acids)

1 cup crushed roasted peanuts or a handful of raisins

First you need to beat the eggs with sugar into a strong foam, and then gradually add honey, kefir, flour into this mass, onto which you sprinkle soda. Add peanuts last. If you want to add raisins, after pouring the batter into the pan, simply sprinkle the washed and dried raisins on top. There is no need to mix it into the dough so that it does not settle to the bottom during baking. Raisins can be replaced with pieces of dried apricots or dried figs. Bake at 180-200 degrees for 35-45 minutes. The honey darkens the pie quite quickly, so check for doneness after half an hour using a match or a sushi stick. For those who don’t have a mixer and the honey is heavily candied: place the bowl of honey in a water bath (or just in a bowl of hot water) for a few minutes until it becomes liquid.
