The fruits of the red variety are poisonous - it is generally better not to mess with it in cooking, otherwise you risk getting to a hospital bed.

A completely different matter is the black elderberry. It is a large, branched shrub with beautiful white inflorescences and clusters of small black berries gathered in umbrellas.

Many people mistakenly believe that this shrub is a weed and completely useless. But do not rush to uproot this plant from your site.

It turns out that the flower has medicinal properties, is widely used in folk medicine, its leaves can be decorated, and, most importantly, in hot summer weather, amazing refreshing homemade kvass comes out of it.

It is quite simple to grow such a medicinal bush: it is unpretentious, has no pests and does not need fertilizer or special soil.

Elderberry recipe

Black elderberry is not a favorite of culinary delights, which is explained by its relationship with its red variety - a poisonous and dangerous plant.

Surprisingly, the berries of this shrub make delicious jam, canned food, jams, spicy sauces and seasoning for meat and fish, vinegar, compotes, juices and many other refreshing drinks.

The dried flowers are wonderful for tea recipes and are added to the dough for an almond aftertaste.

Folk artisans even pickle it, using its processed young shoots, but this is a painstaking business and requires skill and knowledge of the properties of herbs.

Recipe for making kvass from elder flowers

Almost all dishes and drinks from the black variety of the plant have both taste and medicinal properties. A special place among the recipes is occupied by the secret of making a refreshing kvass from white flowers, whose medicinal benefits and taste are truly unique.

The recipe for this drink was popularized by the Ukrainian healer and sorcerer Bolotov, who is engaged in folk medicine and knows about the amazing secrets of this fruit.

Here's the recipe:

  • For preparation, we store and mix the following substances: 3 liters of well water, 2 glasses of black elderberry inflorescences (for lack of flowers, we use berries), a teaspoon of sour cream and one glass of sugar;
  • Mix thoroughly and place in a dark warm place for fermentation for up to three weeks;
  • We use the resulting drink as a medicine that improves digestion, 0.3 liters 10 minutes before meals.

You should know that medicinal properties are also characteristic of this shrub: elderberry decoctions help restore metabolism in the body, improve the excretion of bile and soothe the nervous system.

On a hot summer day, you want to feel the tonic effect of soft drinks. Stock up on elderberry flowers or prepare a drink back in the spring. It makes sense to make a larger amount of the drink, he will wait until the desired time of consumption.

The elderflower drink is really delicious, smells good and is great refreshing.

The recipe is based on a proportion of ten liters.

We will need:

  • a saucepan or any plastic or enamel container with a lid;
  • colander or sieve;
  • about 75 grams of fresh or dried elderberry flowers;
  • sugar powder 320 grams;
  • filtered water (3 liters);
  • one teaspoon of citric acid;
  • lemon 1.

Recipe for refreshing elderberry kvass (step by step)

Step 1

Pour sweetened water into a saucepan and bring to a boil. Add lemon. We cool it down.

Step 2

We wash the lemon and cut it into thin slices, select the seeds, they can give bitterness, cut off the zest. Lemon can be substituted with a teaspoon of citric acid.

Step 3

Mix all of the above ingredients in a saucepan. Add 20 elderberry inflorescences to the pan, having previously examined them for bugs and worms, do not rinse the flowers. Cover with a lid and put in a dark place for five days, stir daily.

Step 4

After five days we filter the kvass through a sieve or cheesecloth.

Step 5

We pour the drink into bottles and leave in the refrigerator. It is best to use glass bottles and pour kvass three quarters of the capacity. This is a necessary measure. Since the kvass will turn out to be highly carbonated and will ferment.

Step 6

Drink chilled, you can add mint and ice.

There are several variations of this recipe. Some cooks use cheesecloth or linen instead of a colander. It is also better to use beer bottles when bottling, they are stronger and more reliable, do not shake, even when the drink is already in the refrigerator - the bottles can explode, since fermentation continues for a long time.

Champagne from black fruit and kvass from black elderberry are one and the same drink, it is really carbonated and fizzy. It can be drunk on the second day after fermentation. But the recipe says it's best to wait up to four days.

During fermentation, kvass looks extremely unattractive, but do not be embarrassed, after straining it will acquire the desired presentation, do not rush to pour it away. Pouring kvass into bottles, add a few raisins. Sourdough, depending on temperature, can ferment for up to 10 days, pay attention to this when fermenting. Now you know how to make delicious elderberry kvass.

The calorie content of such a drink is 36 kilocalories, it contains only 9 grams of carbohydrates, one might say that it is a dietary product. Use a drink recipe in your kitchen.
