We will need the following ingredients:

  1. Eggs - 4 pcs.
  2. Cottage cheese - 0.4 kg.
  3. Powdered sugar - 200 g.
  4. Vanillin, baking powder.
  5. Butter - 100 g.

Using a mixer, you need to slowly beat the eggs with powder. You have the right to regulate the amount of powdered sugar yourself. Then add oil to the mass, which will add softness. After this, add cottage cheese, vanillin and baking powder. You can also add cinnamon. Beat the whole mass with a mixer so that the dough has as uniform a structure as possible.

Grease the silicone molds with butter (you will need to melt the butter), and then spread out the dough. If you want to get a curly top of the cupcake, then it is better to spread the mixture through a large bag. The molds should not be filled to the very top, because the dough will grow during baking. The top of the baked goods can be greased with yolk. It will give it a beautiful color.

It is very important to place the molds with the dough in a hot oven. The cupcakes are baked at one hundred and eighty degrees for fifty minutes. A very tasty and wonderful dessert will be obtained if the inside of a large cupcake is filled with several types of fruits and berries with the addition of grated chocolate, which will melt and soak the porous dough. 2. Melt the butter. It’s better in the microwave, but if time allows, you can leave it at room temperature for a while. The most important thing is to add it not hot so that the eggs do not curdle. Mix.

3. Add cottage cheese, beat for about three more minutes until smooth. I prefer making these muffins with full-fat cottage cheese.

4. Sift the flour through a sieve to enrich it with oxygen and gradually add it to the dough. In general, it is advisable to always sift the flour, this will give the baked goods more fluffiness. Add a pinch of salt. If desired, you can omit adding salt at all.

5. Quench the soda in vinegar or add baking powder. Mix the dough. It should turn out homogeneous, without lumps.

6. Beat the whites into foam with a pinch of salt, add to the dough and mix gently.

7. Place about two-thirds of the finished mixture in our silicone molds and place in an oven preheated to 160 degrees. At first we set the temperature low so that our cupcakes rise. After 15 minutes, increase the temperature to 180 degrees and cook until golden brown for about 25 minutes. You can check readiness with a toothpick.

6. You can remove the cupcakes from the molds when they have cooled down a little. It will be very beautiful if you sprinkle the finished cupcakes with powdered sugar. And, of course, nuts, raisins or even candied fruits will not interfere with the dough, everything is optional!

This is probably one of the simplest, but time-tested, recipes for making cottage cheese muffins. If I’m too lazy to look for something new, and there’s cottage cheese that urgently needs to go somewhere, I bake it this way. Ideally, it is advisable to take very fatty cottage cheese 9 - 12%, but I added different ones, including completely low-fat ones.

As a filling, you can add raisins, pieces of dried apricots, prunes or other candied fruits to taste. We also really like it with frozen cranberries or blackcurrants. You just need to take a few of these berries, otherwise “Moscow can be seen,” as my mother puts it.

Whisk soft butter with sugar.

Then beat in the eggs and add the cottage cheese. Beat until smooth. Sift flour with baking powder.

Place the dough into muffin tins. Fill the mold 2/3 full. I use silicone ones, so I don't lubricate them with anything.

Bake in an oven preheated to 180 degrees for 35 minutes.

Remove the finished cupcakes from the mold and let cool.

Before serving, sprinkle with powdered sugar, confectionery sprinkles or icing.

I dipped the cap in jam and decorated with coconut flakes.
