Caviar sandwiches: how to do it?

If you wish, you can simply eat any caviar with a spoon, but if you have a festive event, it is better to serve original sandwiches with red or black caviar on the table. If desired, an expensive product can be replaced with a more inexpensive analogue, for example, cod or capelin caviar.

Caviar sandwiches are prepared very quickly and quite simply. Some experience may be needed only when decorating a dish. But first you need to thinly slice the bread, spread it with butter, and then put the caviar on the slices. If the classic bread-butter-caviar sandwich seems too boring and simple to you, nothing prevents you from preparing a more complex design.

White bread slices can be substituted with crispy toast or salty crackers - the sandwiches will taste completely different! You can also give up traditional butter in favor of heavy cream or sour cream, the main thing here is not to forget to salt the chosen product. If you still settled on the classic version with oil, you can update it a little: beat the butter with a mixer and add finely chopped herbs and curry powder to it. Very tasty and unusual! Soft curd cheese can also replace butter - it will add new flavor notes to sandwiches.

A great option for those who do not eat bread is to use cucumber, boiled potatoes, thin pancakes, halves of boiled eggs or lightly salted fish as a base. You can also serve caviar in tartlets, but these will definitely not be sandwiches in their classical sense. If you wish, you can buy tiny baskets at the store or prepare yourself.

Red caviar may be considered a delicacy, but caviar sandwiches have become classics for a long time. Think for yourself what appetizer can decorate the festive table better than this dish? Moreover, it is not at all difficult to prepare such an appetizer, and if you show a little imagination, you will also get a very beautifully designed composition.

SANDWICHES WITH RED CAVIAR RECIPES

Classic sandwich with red caviar

Ingredients:

Loaf (any bread will do) -1 pc.
Caviar - 200g.
Butter - 100gr
Greens - optional, a few sprigs of dill, or parsley for decoration.

Preparation:

Frankly, I can’t dare to call it a recipe and I can hardly believe that there are people in the world who are not able to spread butter and caviar on their own bread, but since I started writing about sandwiches with caviar, I cannot do without classics.
1. Cut the loaf into 1.5-2 cm slices, if you cut it thicker, the bread will interrupt the taste of caviar and you will have to add much more of it. If cut into very thin slices, it will be difficult to spread butter, and it is not convenient to eat such sandwiches, they will fall apart in your hands.

Ingredients:

Loaf (bread to taste) - 1 pc.
Cream cheese (or sour cream) - 100 gr.
Red caviar -200 gr.
Greens (dill, parsley) - to taste, for decoration.
These sandwiches perfectly combine the flavors of fresh cucumbers, delicate cream cheese and salted caviar. They are perfect for decorating a festive table, because their taste differs from the classic recipe.

Preparation:

1. Cut the loaf into 1.5-2 cm slices.

Sandwiches with red caviar and egg

Ingredients:

Loaf (bread to taste) - 1pc.
Butter - 100g.
Chicken egg (quail eggs) - 3 pcs.
Red caviar - 150g.
Dill, parsley - if you want to decorate sandwiches, greens will not hurt.

Preparation:

The recipe is very simple, but there are various options. Many of my acquaintances believe that mayonnaise goes better with eggs than butter. Replacing just one ingredient, you get a completely different taste, in principle, not bad, but I prefer the classic more. In any case, this appetizer is very high in calories, it should not be overused.
1. Cut the loaf into 1.5-2 cm slices.

If you want to cook eggs stuffed with caviar, the recipe is here ...

Sandwiches with red caviar and cream

Ingredients:

Baton - 1pc.

Cream (whipped) - 6 tbsp. l.
Butter - 60g.
Red caviar - 100g.
Dill - 2-3 branches.

Preparation:

These little sweets are perfect for special occasions, banquets and, of course, will come in handy for a festive table in the New Year. After all, beautiful sandwiches with red caviar canapes are the most popular appetizer at any buffet table. The only negative is that it is hard to take them without getting dirty, tk. the sides are oiled, so they should be served on skewers, or offer forks to the guests.

1. Cut the bread into 1.5-2 cm slices.

2. Caloric content of caviar is normal. Caviar is very well absorbed by our body. But if we look at it fully, then a sandwich with red caviar is not the most useful product. The oil is almost entirely fat. Bread is fast carbohydrates. It is clearly not worth eating such food at night. If you listen to nutritionists, then the ideal ratio of BZHU (proteins / fats / carbohydrates) is 16% \ 17% \ 67%, BZHU sandwiches with red caviar 23% \ 35% \ 45%. This is not far from ideal, but the calorie content of the dish is insane, about 345 Kcal per 100 g of product. For overweight people, it is advisable to eat caviar in its pure form and in small quantities.

(I can't help but add my “I”, a normal Russian man, according to the advice of nutritionists, will probably die in a week at 2200 kcal per day. Let it be subjective, but this is my opinion and my website :))

3. Salt. Yes, we are used to adding it to food and without it food seems tasteless to us. And I love salty foods. But this is a minus, whatever one may say. Salt retains water in our body, in addition, it accumulates in the joints. I do not think that this is an argument for refusing seafood, but the fact is.

4. Allergies. Everything is trite here. Caviar, fish and virtually every “sea protein” contains parvalbumin. It is an absolutely safe protein that forms the muscle structure of living (namely, protein makes them so) marine organisms. Meanwhile, scientists have recorded an increased content of parvalbumin in salmon (red fish). Which means that if you are allergic to fish, it will be to any, but to red it will appear much faster and brighter, because logically, the higher the concentration of the allergen, the brighter the symptoms. Again, I do not want to slip into paranoia, but I do not advise pregnant and lactating women to eat caviar, because this can cause a hypertrophied reaction in the child's body.

I started with a good one, but in the end I even got scared myself rereading what I had written, although I eat caviar quite often :).

Beautiful sandwiches with red caviar, decoration

Of course, caviar is a very tasty and healthy product, but perhaps the most important thing is the rarity of this delicacy. And if you are able to treat guests with such delights, your efforts should be appreciated. Even a piece of bread can be turned into something unique, the main thing is to know how to serve it. I will not hide, some of the photos are not mine, many were taken by my good friend Roma, on his professional camera, for which many thanks to him. (but my recipes were photographed by my ancient phone, why should he burn in hell :))

The expression “eat caviar with spoons” is not a mockery at all, but a way of serving this delicacy. There is a Russian and European way of serving caviar. In the Russian tradition, it is customary to serve caviar in glass, porcelain or metal deep dishes. Caviar was eaten with small silver or gilded spoons. For especially solemn occasions, special vases of ice were frozen and caviar was served in them, decorating it with thin slices of lemon and sprigs of parsley. Traditionally, it is believed that caviar should be washed down with chilled vodka.

The European way of serving caviar is somewhat different from ours. Caviar is served in special caviar bowls, often made from mother-of-pearl shells, and eaten with mother-of-pearl spoons, since it is believed that the metal spoils the taste of the caviar. Caviar dishes are placed on a special vase - a crushed ice vase - in which crushed ice is poured. Dry champagne is served with caviar in Europe and America - the right approach, since it is the salty taste that truly reveals the taste of sparkling wine.

However, back to our sandwiches. Caviar sandwiches are not just prepared quickly, but very quickly. All you have to do is cut the white bread, spread it with butter and lay the caviar. But no, the concept of a sandwich can fit almost everything - from the classic "bread-butter-caviar" to the most incredible designs. Swap out a slice of white bread for crispy toast or salted crackers and your caviar sandwiches will spice up with new flavors. Traditional butter can be whipped with a mixer and combined with finely chopped herbs or curry powder. You can do without butter at all, and instead use heavy cream or sour cream, just do not forget to add some salt to them. Soft curd cheese perfectly replaces butter in caviar sandwiches, adding new flavor notes.

You can generally refuse bread, and use cucumbers, halves of boiled eggs, boiled potatoes, thin pancakes or lightly salted salmon or trout as a basis for sandwiches. If you want to serve caviar in tartlets, you don't have to spend hours fiddling in the kitchen baking tiny baskets - you can now buy special caviar tartlets in stores.

It is customary to decorate sandwiches with caviar with thin slices of lemon, slices of olives, parsley or dill leaves. "Lace" made from fresh cucumbers is also great both in taste and appearance.

Sandwiches with red caviar and tuna. Mash a can of canned tuna with heavy cream and brush over toasted toast or salted round or square crackers. Top with a teaspoon of red caviar.

Sandwiches with red caviar and salmon. Cut the white bread into triangles and dry in the oven or toaster. Brush the toast with butter mixed with very finely chopped herbs, place the red caviar in one layer. Lightly salted salmon or trout cut into thinnest strips using a sharp knife and lay on top of the caviar, forming a wave or folding it into a rose. Decorate with a parsley leaf.

Ingredients:
160 g red caviar,
150 g butter
1-2 onions
300 g salted salmon fillet,
2 fresh cucumbers,
200 g low-fat cottage cheese,
50 ml sour cream,
2 tbsp spicy horseradish

greens, red ground pepper, lemon.

Cut off the crusts from the bread, cut into slices 5-7 mm thick. Chop the herbs. Sour cream mix with horseradish, cottage cheese and red pepper to taste. Grease half of the bread slices on top and on the sides with butter, the other with curd-sour cream mixture. Sprinkle chopped herbs over the slices. Lay out the red caviar and decorate: sandwiches with butter - the thinnest slices of lemon and herbs, sandwiches with curd-sour cream brushing - thin slices of cucumber and transparent half-rings of onion.

Cut the fillets of lightly salted salmon with a thin, sharp knife as thin as possible. Brush the slices with soft cream cheese and roll into rolls. If the rolls are wide, cut them in half or in thirds. Place them vertically on a flat dish and place a teaspoon of caviar on top. Decorate with a parsley leaf.

Cut fresh cucumbers into thick slices and remove some of the pulp with a teaspoon. Mix thick sour cream with chopped herbs and salt. Fill cucumbers with sour cream, put red caviar on top. Serve on lettuce leaves.

Sandwiches with caviar on onions. To make these sandwiches, you need a sweet white or red onion. Cut the onion into 4 pieces and disassemble into "boats". Put a little salted sour cream or heavy cream in the cavities of the boats, and on top of it - red or black caviar. Serve garnished with herbs.

Cut boiled eggs in half lengthwise. Grind the yolks with softened butter and finely chopped herbs. Put a teaspoon of the resulting mixture in the halves of the eggs, put the caviar on top of it. Garnish with the finest slices of fresh cucumber.

Sandwiches with caviar on potato pancakes. Grate raw potatoes on a fine grater, drain off excess liquid, salt and pepper, beat in one egg and knead the dough. If it turns out to be watery, add a little flour. Bake small round pancakes and refrigerate. On each pancake, put a spoonful of salted sour cream, and on top - caviar. Sandwiches can be made closed: brush one pancake with red or black caviar over the entire surface and cover with another pancake. Decorate with herbs.

Whisk the raw eggs and cream, season with salt and pepper and sauté the thin omelets. Cool, brush with soft cream cheese and roll into rolls. Cut each roll across into rolls 2-2.5 cm thick, place it vertically on a flat dish and lay the caviar on top.

If you want to surprise your guests, prepare:

Ingredients:
250 g butter
½ stack. cold water
½ tsp citric acid
1 egg,
flour,
a pinch of salt,
butter with herbs or soft cream cheese,

Greenery for decoration.

Preparation:
Add citric acid, a pinch of salt to cold boiled water and stir. Beat in an egg. Chop 150 g butter with a knife, sprinkle with flour constantly until you get a homogeneous mass. Add water and egg, stir and knead the dough, gradually adding flour. The dough should be elastic. Roll it into a ball and refrigerate for 1 hour. Lightly soften the remaining butter, dust with flour and mold a rectangle out of it. Put the oil in the refrigerator. Now roll out the dough, place the butter in the center and fold the dough into an envelope. Roll out the dough again in one direction, fold and store in the refrigerator. After 20-30 minutes roll out the dough again (and strictly in one direction!), Fold and put in the refrigerator. Repeat the rolling, folding and cooling operation three more times. Ready puff pastry roll cut into a layer 3-5 mm thick and cut into circles with a glass. In half of the circles, cut out round holes in the center - you should get rings. To do this, you can use a cut-off disposable syringe - cut a hole and squeeze it out with a plunger. Place dough circles on a greased baking sheet, brush with an egg and place the rings on top. Also grease them with an egg, being careful not to get it on the edges of the shuttlecocks. Place in a hot oven and bake until golden brown. Fill the cooled volovan with butter or soft curd cheese and place the caviar. Decorate with herbs.

Caviar sandwiches on chips. Whisk in softened butter until white and stir in chopped parsley or dill and squeeze small roses onto large molded chips using a cornette. On both sides of the oil rose, put a half teaspoon of caviar - red or black. Garnish with a parsley leaf and serve immediately. It is impossible to store this treat for a long time, as the chips become soaked.

Take special caviar tartlets (they are much smaller than usual). Place some whipped butter or soft cream cheese on the bottom of the tartlets, top with a teaspoon of caviar and garnish with a thin slice of lemon or cucumber.

In addition to delicious red or black caviar, our stores sell many types of caviar, which are not inferior to their expensive counterparts in taste and benefit. Try making sandwiches with pollock caviar, for example.

Option No. 1. Making sandwiches with red caviar and cream cheese

If you need to make a lot of sandwiches, and there is only one jar of red caviar available, you can shift the focus to cream cheese and arrange everything beautifully. This cheese has a "noble" taste, it is quite worthy to be juxtaposed with red caviar.

For the base of sandwiches, rye bread will not work; you need wheat baguettes or loaves with a delicate crumb and a crispy crust. The creamy caviar filling is suitable for choux pastry profiteroles, tiny puff baskets. Cheese and caviar sandwiches can be made "crackers", but the biscuits should be crumbly and thick.

Beautifully decorated sandwiches with red caviar are obtained from French loaf or oblong buns similar to it. The crunchy sesame shell of the buns will add originality to the dish. The taste of cream cheese should be neutral without harsh flavors; sour and spicy cheeses do not go well with red caviar.

The loaf is cut into centimeter-sized pieces, you should not cut it obliquely, such sandwiches look worse, in addition, their edges are difficult to smear with butter when decorating.

The dill leaves are very finely chopped, the stems are not used. Dill is an ideal green for decorating caviar sandwiches. Parsley and cilantro are overly spicy, they will claim to be the first place for taste in this dish, so it is better not to use them.

The crust of each piece is greased with soft butter, then the roll is rolled over a plate of chopped dill. Dill edging adorn sandwiches and emphasize the taste of caviar.

Put the cream cheese into a culinary bag, fix the nozzle with a small figured hole. Cheese is squeezed out in the form of flowers or pyramids. Cream cheese keeps its shape perfectly, it will not flow or melt. The middle of the sandwiches are not greased with butter or cheese.

A little red caviar is placed in the center of each sandwich. You will get delicious cheese chamomile with a red caviar center. In such sandwiches, dense fine-grained caviar is usually used for decoration.

Sandwiches are served immediately. Caviar cannot be stored for a long time without a can. Different varieties of red caviar behave differently: some eggs dry out and become weathered, others deform and “melt”, and the bread is soaked in caviar liquid. If you need to make quick sandwiches, the caviar is gently mixed with cream cheese and spread on the bread.

Option number 2 "Goldfish"

Cut two pieces from an oval wheat loaf.

Each slice will be a separate fish. On one side of the slices, two corners are cut off so that the bread looks like the body of a fish. And from the cut corners you get a tail.

The body of the fish and the tail are smeared with butter. The eyes are slices of olives, the pupils are red eggs.

Red caviar is spread with a teaspoon, imitating a striped pattern on fish scales.

The olive is cut into small strips, the pattern is laid out along the upper contour of the fish.

The green onion feathers are cut into cubes and decorated with the fish belly. Several dill stalks are laid out on fish tails. A couple of dill sprigs and a few stalks of green onions are used to recreate benthic vegetation.

In some places, large whole olives are laid out.

Design option No. 3 "Forest mushrooms"

The sides of the slices of bread are cut off so that the mushroom caps are obtained.

The cut corners are folded in pairs, forming thick mushroom legs.

The hats are greased with butter. On the edge of each hat, thin strips of blue onions are laid out, imitating the plates under the hats. The legs are also oiled and sprinkled with dill.

When decorating, the mushrooms should be located at different levels to make the composition more natural. The mushroom caps are completely filled with red caviar, spreading it out in an even thin layer. In the mushroom meadow, dill and berries are "grown". Green onions are finely chopped and used to decorate sandwiches with red caviar: sprinkle the seam connecting the cap and the leg, emphasize the line of the plates under the caps.

Forest mushrooms look very appetizing. If you want to make small mushrooms, you can “stamp” them by squeezing them out of the bread crumb using a shortbread cookie cutter.

Option No 4 Making sandwiches with red caviar for children - "Red Dog"

Animalistic sandwiches should interest the child, be funny and resemble soft toys. You should abandon the realism of the image, preferring simplification of features and stylization. The corners of the white slice of bread are cut off. The resulting trapezoid of irregular shape is the future head.

The lower part of the muzzle is cut out of black bread. In this case, a butterfly mold is used. But instead, you can cut a heart or a regular circle. The base of the head is evenly covered with butter, a cut out butterfly is placed in the center.

The eyes and nose are olives, the sharp ears are the corners of a black bread slice. The sandwich toy is decorated with red caviar, the grains are distributed unevenly on the ears.

To make the eyes expressive, the rings of olives are filled with butter, and a small oil-bearing slice-pupil is placed on top. A slice of white bread will become the body, slices of black bread will become legs.

The body is greased with butter, then red caviar is laid out. Pieces of olives are laid out in rows around the neck of toys, and the rings are placed on the paws. The New Year's red-haired toy dog should sit in the "spruce thickets" of dill and lettuce leaves.

Caviar sandwiches are a great snack - filling and aesthetically pleasing. Thanks to its salty taste, caviar of any kind can be perfectly combined with different types of bread and other savory pastries, add vegetables and herbs to it.

This dish will be an excellent solution for a festive table.

So, how can you decorate sandwiches beautifully, and what are the most delicious recipes?

To create a festive atmosphere, it will be useful to try to decorate the sandwiches as best as possible. A beautiful design is not such a difficult process and any housewife can do it.

To make the appetizer look advantageous on the festive table, you can use the following tricks:

  1. Use different types of bread. Classic caviar sandwiches are made using a sliced loaf. Black, gray, whole grain, with seeds, with bran, rye bread will help to diversify not only the taste, but also the appearance of the snack. In addition, dry bread and unsweetened shortcrust dough tartlets are suitable for some recipes.
  2. Diversify decorations. Traditionally, housewives use sprigs of dill or parsley. In addition to them, using a carving knife, you can cut various figures from cucumbers or cherry tomatoes, such as baskets, spirals, petals, and decorate with them not only the snacks themselves, but also the dish on which you plan to serve them. Additionally, you can use skewers, especially if the sandwiches are very small.
  3. Bread slices come in a variety of shapes. They can be made round, triangular, polygonal - it all depends on the imagination of the hostess. Unusual shaped snacks always look festive and attract the attention of guests.
  4. Serving ready-made snacks. They can be placed on one large dish, or spread out on small trays. If different types of caviar are used, the appetizers can be grouped according to taste, or a platter can be made on each plate.

One more important criterion should not be forgotten. No matter how beautiful the snacks are, special attention should be paid to the quality of the caviar. It is a protein product and is susceptible to spoilage soon, so sandwiches should be prepared with fresh ingredients just before serving.
