How to cook okroshka in mineral water with chicken and sour cream

Boil the potatoes until tender. You can cook it in its “uniform”, you can peel it and cook it right away, it doesn’t matter. Then cool and cut into small cubes. Boil the eggs hard. To do this, place in a saucepan and fill with water. Add a teaspoon of salt to the water. If there is a hole in the egg, the salt will prevent the egg from leaking. From the moment the water boils, cook the eggs for 8-10 minutes. Afterwards, drain the hot water and pour cold water over the eggs. Cool, peel the shell and chop finely. Place the chopped potatoes and eggs in a saucepan.


Wash, peel and finely chop fresh cucumbers or grate them on a coarse grater, as I did. Add to the eggs and potatoes in the pan.


Wash the green onions and chop them finely. Place in okroshka.


Wash parsley or dill, or you can wash both, chop and add to the pan.


Wash the chicken fillet and place it in a saucepan. Fill with clean, filtered water. Bring to a boil, reduce heat, skim off foam and cook for 20-25 minutes until tender. Then remove from the pan and cool. Finely chop the chicken fillet and add to the okroshka.


Pour mineral water into the pan.


Salt to taste and add lemon juice or citric acid to taste. Adjust the thickness of the soup with water.


Okroshka with mineral water is ready. When serving, add sour cream to the plate.

Classic okroshka made with kefir and mineral water takes on a slightly piquant taste. The refreshing note is emphasized by a variety of spicy herbs - parsley, dill and green onions. This is the simplest recipe with a traditional set of products.

Ingredients:

  • Potato tubers – 1-2 pcs.;
  • Selected egg – 2 pcs.;
  • Red radish – 100-150 g;
  • Spicy greens (dill, onion) – a bunch;
  • Kefir – 1 l;
  • Mineral water – 700-800 ml;
  • Boiled sausage – 250 g;
  • Fresh cucumber – 1-2 pcs.;
  • Table vinegar 9% - 1 tbsp. l.;
  • Salt (plain or with iodine) - to taste.

Preparation:

  1. Prepare your food. Boil the potatoes in their skins until tender. Cool the tubers. Also hard-boil the eggs and cool under running water. Rinse the spicy herbs and dry on a towel.
  2. Start cutting. Potatoes, eggs and sausage - cubes. If you are cooking for many servings, there is an option to use a food processor with a special attachment for slicing. Place the ingredients in a saucepan.

  1. Next, cut the cucumber into thin slices. If the vegetable is mature, cut off the thick skin and use only the pulp. Cut small cucumbers whole.
  2. Cut the radishes in the same way.
  3. Chop the greens with a knife. Place everything in a common pan.
  4. Pour in cold kefir. Add mineral water, also cold and with gases. Mix everything. You will get almost a whole pan with a capacity of 3 liters.

  1. Pour in vinegar. If you only have essence and not 9% vinegar, simply dilute it with water. The ratio of acid and water is 1:7. Stir and use in recipe. Add salt to taste. Stir again.
