  • Antonovka apples – 6 medium apples;
  • sour cream – 250 g;
  • sugar – 150 g;
  • flour – 2 tbsp. spoons;
  • vanilla sugar - 1 package;
  • chicken egg – 1 pc.

Cooking step by step:

I always start cooking by kneading shortcrust pastry. Sift the flour into a deep bowl. Next I add vanillin (can be replaced with cinnamon), sugar and mix. I grate the butter removed from the freezer onto a coarse grater directly into a bowl and knead until crumbs appear. In this state, I place the dough base in the refrigerator for 10-13 minutes.

After the allotted time has passed, I take out the container and grind the mixture into fine grains with my hands. I pour heavy sour cream into it and quickly knead the dough.

I choose baking dishes with high sides, since when placing the dough in it, we form the sides at least 4 cm. Additional cooling of the base already placed in the mold helps me make shortcrust pastry even more tasty. To do this, I wrap them in cling film and refrigerate them for another 20-30 minutes.

While the dough is simmering, I prepare the filling. Using a mixer, thoroughly beat the sour cream with eggs, flour, sugar and vanilla. I cut the washed apples in half and remove the cores. Then I cut it into thin slices. I generally don't peel the fruit, but if it's very thick or damaged, it's best to get rid of it.

After half an hour, carefully place the slices in a circle in a cooled form with dough. I pour sour cream on top and put it in an oven preheated to 180C for about an hour. The time depends on the oven; after 40 minutes you should check to see if it’s done.

The pie, prepared according to Marina Tsvetaeva’s recipe, is served and cut completely cold, otherwise its unique filling will leak out. The pie should be stored in the refrigerator, although given how delicious it is, it is unlikely that it will survive that long!

cognac – 20 ml;

  • sugar – 150 g;
  • sunflower oil – 1.5 tbsp. spoons;
  • butter – 60 g;
  • walnuts – 100 g.
  • Cooking quickly and easily:

    I sift the pancake flour, add baking powder and mix. In an enamel container, grind the eggs with sugar using a fork. Then I add the prepared flour there and mix again. I add milk, cognac and vegetable fat to the already obtained mixture and thoroughly beat it in again and set aside.

    I start the oven to warm up to 200C. I wash the fruits and thoroughly peel them. Without dividing into halves, I cut them into thin slices using a hand grater. I grind the nuts in a blender.

    Pour the finished dough into a bowl with apples and mix gently so that the pieces do not break. Then I transfer it to a small form and bake for 25 minutes.

    When the time is up, I take out the pie and sprinkle chopped nuts on top. Then I put it back in the oven for another 10 minutes.

    Important! Under no circumstances should we remove hot baked goods from the pan immediately after cooking. Leave it in the mold until it cools completely.

    There is no need to decorate the “Invisible” cake; it already looks very fascinating. And the delicate texture of the baked goods gives the feeling of the delicacy melting in your mouth.

    Apple pie charlotte with apples, grapes and condensed milk in the oven

    Charlotte prepared with condensed milk turns out to be very interesting and unusual. I mastered this recipe recently, but my men already love it.

    To prepare you need to stock up:

    • apples – 2 pcs.;
    • white grapes – 150 g;
    • lemon;
    • flour - 1 tbsp;
    • chicken eggs – 2 pcs.;
    • vanilla sugar - 1 package;
    • condensed milk – 1 can;
    • soda – 7 g;
    • powdered sugar.

    Simple cooking method:

    I wash the grapes and apples thoroughly and let them dry. Then I separate the grape bunch into individual berries, and peel the fruit from the core and cut it into slices. I turn on the oven so that it warms up to 180C.

    In a bowl of suitable size, beat the eggs with condensed milk and mix them with a whisk. Then add sifted flour, vanilla sugar and soda slaked with lemon juice to the resulting mixture. I carefully mix everything until smooth.

    I pour the dough into a silicone mold, lay apples on top in a circle, and fill the middle with grapes.

    The charlotte is baked for about 35-40 minutes. After it has expired, the mold is taken out of the oven and placed on the window to cool.

    And now, as promised, a bonus for those who read this article to the end. The result is a delicious, full of apples, aromatic and impeccably tasty pie, similar to a tender charlotte - but definitely not.

    Of course, someone might think that apple pie is boring; such a simple dish will not surprise anyone, especially now that apples can be bought in the supermarket regardless of the season. But only those who have not yet been lucky enough to try truly delicious and varied strudels, tarts, open and closed apple pies with fresh apples from their own garden think so...     What's the first thing that comes to mind when you hear the words "apple pie"? 99% of people answer: charlotte. Let's start with it.

    Ingredients:
    1 tbsp. Sahara,
    1 tbsp. flour,
    3 eggs,
    1 tbsp. butter,
    4-7 apples depending on size.

    Preparation:
    Beat the eggs and sugar thoroughly, add flour and beat again. Cut the apples into slices or cubes (you don’t have to peel them). Thoroughly grease the baking dish with oil, lay out the apples and fill with dough. Place the pan in an oven preheated to 180ºC, bake for 30-40 minutes until golden brown. Check readiness with a fork - if it comes out dry, the pie is ready (but do not open the oven in the first half hour so that the pie does not settle).

    Did you know that in fact, charlotte is not at all the apple pie made from biscuit dough that we just described. The original English charlotte is a type of pudding made from apples and bread, and is even easier to prepare.


    Soak pieces of white bread or rolls in butter and sugar or in a mixture of eggs and milk, place on the bottom of a baking dish. Place a layer of boiled or baked and mashed apples on top. Repeat the layers several times, the top layer being bread. Bake the charlotte until golden brown, serve with whipped cream, ice cream, and sweet sauces.

    American cuisine has its own apple pie - pie. For some reason, it happened that in Russian it is called the same, without translation - pie.

    Ingredients:
    For the test:
    300 g flour,
    150 g butter,
    1 egg,
    1 tbsp. cold water.

    For filling:
    100 g butter,
    100 g refined sugar,
    100 g brown cane sugar,
    3 tbsp. flour,
    50 ml. water,
    5-7 green apples,
    cinnamon to taste.

    Preparation:
    Knead the dough, wrap it in cling film and put it in the refrigerator for an hour.
    Melt the butter, add flour, stir so that there are no lumps left, add water and both types of sugar, cook until it dissolves. Peel and core the apples, cut into thin slices and mix with the filling.
    Take out the dough, divide into 2 parts. From one part, roll out a layer so that it covers your baking dish with sides. Place the layer in the mold and place the filling on it. Roll out the second part of the dough and cut into strips or roll into ropes and arrange in a grid over the filling.
    Bake the pie for 40-45 minutes at 200 ºС.

    In modern Russian cuisine there is a similar pie, where sour cream is used in the filling instead of butter. For some reason it is called Tsvetaevsky. It is generally accepted that sisters Marina and Anastasia Tsvetaeva prepared such a pie when they received guests in their house in Tarusa. Direct indications of this have not been found anywhere, and contemporaries did not notice Marina Tsvetaeva’s craving for cooking. However, the beautiful surname suited the beautiful dessert so well that historical accuracy is no longer important.

    Ingredients:
    For the test:
    1.5 cups flour,
    0.5 cups sour cream,
    150 g butter,
    slaked soda.

    For filling:
    1 glass of sour cream,
    1 egg,
    1 cup of sugar,
    2 tbsp. flour,
    1 kg of apples (preferably Antonovka).

    Preparation:
    Knead the dough thoroughly, cool in the refrigerator, place in a greased pan, stretch and form even sides. Peel the apples, cut into thin slices, and place on the dough. Mix the remaining filling ingredients and pour over the apples. Bake the pie at 180-190ºС for an hour. It is better to serve Tsvetaevsky pie chilled.

    Another signature apple pie is Tarte Tatin. Its name is also associated with two sisters - Stephanie and Caroline Tatin, who ran an inn in the French town of Lamotte-Beuvron and themselves prepared food for guests. The delicious apple tarte Tatin was created thanks to Stephanie's mistake. Either she forgot to put a layer of dough under the apples when she was preparing a regular apple pie; either she forgot about the apples languishing in caramel, they got burnt, and Stephanie saved the situation by covering them with a layer of dough; or maybe she completely dropped the apple pie and decided to serve it without a top. Be that as it may, tarte Tatin has become a classic of French cuisine. Today there are many options for preparing it, using pears, peaches and other fillings, but we will prepare the classic apple one. For the first acquaintance with the “upside-down pie” technology, it is quite possible to take ready-made shortbread or puff pastry, but this will be only a pale imitation of a real French dessert. Be sure to try making it from scratch. For example, according to this recipe:

    Ingredients:
    For the test:
    1 cup vegetable oil (you can use a mixture of olive and sunflower),
    2 cups of flour,
    1 cup of sugar,
    2 ripe bananas,
    1 tsp baking powder or slaked soda,
    salt to taste.

    For filling:
    1 kg of hard apples,
    200 g sugar,
    5-6 tbsp. vegetable oil,
    cinnamon, vanilla - to taste.

    Preparation:
    Peel and core the apples, cut into quarters, if the apples are small - into halves. (If you chop too finely, the apples will turn into puree.) Pour 200 g of sugar into a thick-bottomed saucepan, add 2-3 tablespoons of water and place over high heat. When the mixture bubbles, pour in the oil, add the cinnamon and vanilla and stir the caramel until it turns golden. Do not leave the caramel unattended - it may burn. Turn off the heat, place the apples tightly in the caramel and place in the oven for 15-20 minutes at a temperature of about 160ºC.

    To prepare the dough, mix sugar and butter, add mashed bananas to the porridge. Mix 1 cup of flour with baking powder and salt, add to the banana mixture and mix thoroughly, gradually adding flour to obtain a dense consistency. Form the dough into a ball and flatten it into a flat cake, slightly larger in size than the pan in which the apples are baked. Remove the pan with apples, cover with a layer of dough, tuck the edges in and place in the oven for another 15-20 minutes. After removing the pie from the oven, leave it for a few minutes, after which you can turn it over onto a plate and bring it to the table.

    If you want an apple pie without excess sugar, sour cream, butter and other extra calories, prepare a simple tart:

    Ingredients:
    1 cup flour,
    70 g butter,
    2-3 apples,
    3-4 tbsp. apricot jam,
    salt, sugar, cinnamon - to taste.

    Preparation:
    Place flour and butter in a food processor, add salt and sugar, 2-3 tablespoons of ice water, knead the dough. Grease the mold with oil, spread the dough over it, gently pressing it in, and put it in the refrigerator for several hours. Cut the apples into thin slices without peeling them, fan them out onto the dough, sprinkle with cinnamon, and pour warmed apricot jam over them. Bake the tart for 30-40 minutes at 200ºC.

    Elena Molokhovets also has an interesting recipe for those who are afraid of extra calories. True, you will have to work hard with him. But from the financial side, this recipe is very attractive. This is what it's called:

    Ingredients:
    1 egg,
    1 tbsp. cream,
    1 tsp vegetable oil,
    half a glass of flour,
    0.5 tsp salt,
    600 g apples,
    1 cup of sugar,
    100 g butter.

    Preparation:
    Using eggs, cream, salt, flour and vegetable oil, knead the dough like noodles. Divide the dough into 4 parts and roll each into a thin layer to fit the baking pan. Cut the apples into thin slices. Melt the butter. Place the first layer in a greased mold, grease the dough with oil, place some of the apples on it, sprinkle with sugar, cover with the second layer, also greased on both sides with oil. Continue this way with all layers, grease the top one more than the others. Place the pie in the hot oven. As soon as the juice forms, pour it over the pie. Keep in the oven until the juice turns into burnt sugar. If the oven is hot, then the pie is ready in 20 minutes, and if it is not hot enough, then in 45 minutes.

    Since we turned to Molokhovets, we will not ignore the most original apple pie from her book “A Gift for Young Housewives”:

    Whole apple pie with meringue

    Ingredients:
    9-12 apples,
    1 glass of jam,
    0.5 cups sugar,
    1 tsp cinnamon,
    4 squirrels.

    Preparation:
    Hole out the middle of the apples and remove the skin. Place in boiling water, cook lightly, place on a sieve to drain. When cool, fill the middle with jam, place in a mold, sprinkle with sugar and cinnamon. Beat the foam from the whites, mix with sugar, cover the apples with it, sprinkle with sugar and cinnamon, put in the oven for 15-20 minutes. To serve, garnish with jam.

    Have you ever tried apple pies with wine? Wine makes the dough very tender, similar to shortbread and puff pastry, but quite fragile, so you won’t be able to bake a large pie, but small pies with apples turn out excellent!

    Ingredients:
    For the test:
    400 g flour,
    100 g butter,
    150 ml dry white wine (red wine will turn the dough blue),
    salt, sugar - to taste.

    For filling:
    3-4 pcs. sour apples,
    1 tsp starch,
    1 tsp cinnamon,
    sugar - to taste.

    Preparation:
    Mix butter with wine, sugar, salt and gradually add flour, stirring constantly. As soon as the dough becomes dense and stops sticking to your hands, wrap it in film and refrigerate for several hours.

    Finely chop the apples and sprinkle with sugar. Drain off the juice, add starch and cinnamon.
    Roll the dough into a rope, cut it into pieces and roll them into pancakes. Place the filling into the pancakes and seal the edges. You can grease the sills with egg. Preheat the oven to 180ºC and bake the pies until golden brown.

    We completely forgot about apple pies with yeast dough. And they are no less tasty. For example, like this:

    Ingredients:
    2.5 cups flour,
    25 g yeast,
    1.5 glasses of milk,
    1 tsp salt,
    150 g butter,
    150 g sugar,
    5 cardamom seeds,
    1 kg of apples (Antonovka).

    Preparation:
    Knead the dough from flour, yeast and milk and let it rise. Grind the butter with sugar, add crushed cardamom, mix with the dough, let it rise again and roll into a finger-thick layer.
    Grease a cast-iron frying pan with oil, place the dough on it, pinch off a little bit of it. Roll a piece of dough into a rope and place it along the sides of the pan. Leave the cake to rise for 15-20 minutes, then place apples mixed with sugar, cut into small pieces, on it. Place pieces of butter on the apples and place the pie in the oven for 40-45 minutes.

    And “for dessert” the most difficult thing is strudel made from stretch dough. It was believed that the ability to cook this type of apple pie helped Austrian girls get married successfully.

    Ingredients (for 2 servings):
    For the test:
    200 g flour,
    1 tsp grape vinegar (6%),
    2 tbsp. olive oil,
    1 egg,
    50 g butter,
    a pinch of salt.

    For filling:
    2-3 apples,
    100 raisins,
    2-3 tbsp. Sahara,
    2 tbsp. breadcrumbs.

    Preparation:
    Sift the flour, add salt, make a well in the center, break the eggs into it, add olive oil and vinegar. Knead the dough by adding warm water little by little (about 50-70 ml). You should get an elastic dough that does not stick to your hands. Divide the dough into 4 pieces, roll them into balls and flatten them into flat cakes. Grease the flatbreads with softened butter, stack two on top of each other, pinch the edges and place in the refrigerator for several hours, covered with a plate.
    Peel and core the apples, chop finely, mix with steamed raisins (you can pre-soak the raisins in rum or liqueur), breadcrumbs and sugar.
    Remove 2 dough balls from the refrigerator, place them on top of each other (you will get 4 layers of dough) and roll them out very thin. Brush the entire surface with melted butter, sprinkle with breadcrumbs and spread the filling in a thin layer over the entire surface of the flatbread. Carefully roll the cake into a roll, place it on a baking sheet greased with oil, grease the surface with oil and place in the oven preheated to 180ºC for 40 minutes. Reduce temperature to 130ºC and bake for another 20-25 minutes. During baking, brush the strudel with oil several times. Strudel can be served hot or cold.
