Anise in mulled wine. Spices for mulled wine. Where and what is better to buy

How to quickly warm up on frosty winter days or when it is damp and slush outside? An excellent option can be mulled wine made from red wine, the recipes for which are varied and easy to prepare. In addition, this aromatic drink has useful and healing properties, which is especially important during ARVI and seasonal colds.

A little about the origin

Back in ancient Rome, people mixed wine with spices to enhance the taste of alcohol. But only during the Middle Ages, the inhabitants of Central and Northern Europe came up with such a spicy mixture to warm up to protect themselves from the cold on severe frosty days. Bordeaux was taken as a basis, which was flavored with galangal grass. Later, grass was replaced by other spices: cardamom, star anise, cloves, cinnamon, and so on.

For reference. Galangal herb is somewhat reminiscent of ginger, but has a less pronounced pungent taste and a rich perfume composition (like myrtle and cardamom).

The effect and benefits of heated spicy wine were appreciated not only by the creators of the drink. Soon the hot aromatic drink spread throughout Europe and is now served on winter days in many public places. But you don't have to go to a restaurant or bar to feel the taste and aroma of the famous heated burgundy. You can make homemade mulled wine, which tastes no worse than those offered by experienced winemakers. And we will tell you about how to cook mulled wine at home in this article.

The main ingredients of mulled wine

Correct preparation of mulled wine from red wine involves warming up an alcoholic beverage (both pure and diluted with water) along with spices. It is thanks to this technique that the product received such a name that in translation from German means “blazing (fiery) wine”. Of no small importance is also how to cook mulled wine. The liquid must be warmed up over low heat and under the lid.

Despite the fact that red wine mulled wine recipes can be found in different variations, the composition is almost always the same:

  • there must be wine;
  • spice;
  • fruits can be added to emphasize the aroma of the finished drink;
  • sometimes other alcoholic drinks are present in the recipe.

Which wine is suitable for mulled wine depends on tastes and preferences. But, traditionally, it is prepared on the basis of dry or semi-dry red wine. It is better to take brands that are not too expensive, since they interrupt the taste and do not allow the bouquet of spices to unfold at full strength. But do not stop your choice on the cheapest options in cardboard packaging. The correct answer to the question of which wine is most suitable for mulled wine is any one you like. But not necessarily sweet or dessert.

When preparing mulled wine, the alcoholic recipe comes down to two methods of preparation: either based on pure wine, or alcohol is diluted with water. The strength of the drink must be at least 7%.

Important! Regardless of the recipe you choose, do not let the ingredients boil. Why can't you boil mulled wine? During the boil, most of the alcohol evaporates and the flavor of the spices is distorted. It is necessary to warm up the future culinary masterpiece until the first bubbles and steam appear (70 - 80 degrees). Then the drink is infused for several minutes and immediately served to the table.

Council. There are ready-made sets of spices on sale in order to make mulled wine from wine at home. But it is better to buy these products separately. This will help you adjust the amount of spice you need according to the recipe.

Also, do not use ground spices for mulled wine in cooking. They give the finished drink an unpleasant aftertaste and cloudy appearance.

The recipe can even be simplified as much as possible by loading all the ingredients into the bowl and cooking in the set mode for a certain time. Suitable modes for cooking mulled wine are "Steam", "Frying", time - no more than a quarter of an hour.

Since the Middle Ages, mulled wine has been one of the symbols of Christmas in Europe, especially in the North or Great Britain. In those days, only galangal, an oriental spice, a relative of ginger, was added to heated wine (most often to Bordeaux). Over time, the mulled wine set was enriched, but the main principle remained - you cannot boil wine!

What are the most common products in the mulled wine set?

Wine

Without it, a mulled wine set will not work at all. It's not just burgundy or just red. White, a mixture of wines, and rosé are suitable. It is not at all necessary to take an expensive drink for making mulled wine, but it should definitely be of high quality, even if it is port. No need to wrinkle your nose, because port is also a good drink, by the way ... As soon as small bubbles appear on it, turn off the drink and pour it.

Honey

Another essential component of a mulled wine set. Ironically, some companies replace it with sugar and even jam. This is not critical, by the way, but it is better to take natural honey and put it in cold wine, before that you can melt it in a water bath or in the microwave (but by placing the container in another - with water). Do not put it in an already hot wine - there will be no benefit, but this drink is also a medicine. But if you drink 4-5 tablespoons, and not whole liters, of course.

Lemon

It is necessary not only for aroma and taste, but as a vitamin, without which you cannot cure a cold. Be sure to include not only its pulp and juice, but also the crust - in itself it is a delicious condiment.

Cinnamon

Just a symbol of Christmas and the main sponsor of winter evenings. They add it to gingerbread, and to other sweets, and to tea and coffee. Warms up and accelerates metabolic processes, adds fire and vitality in general. It is better to take the one in the sticks: it will definitely not turn mulled wine into jelly, but it will give its aroma and strength slowly, but in full!

An Apple

It is good if it is part of a mulled wine set: it is both a magical smell and a shock dose of vitamins, which makes the drink even more effective medicine.

Carnation

Ideal in the company of cinnamon, but has a stronger and more astringent, and less sweet aroma and aftertaste. A few "flowers" are enough.

Badian

It is not a relative of anise, and indeed it differs in smell. If the portion of the drink is less than a liter, one "ray" of this most aromatic star is enough.

Ginger

Still, the original galangal differs from it in its taste and is less pungent, and its taste is more “perfumery”. This is why it is best to add very little ginger.

Orange

You can also crust and juice. It will also add vitamins that are so necessary in winter. More rare citrus fruits are also suitable - kumquat, for example.

Allspice

It is also better to add than not. But two or three peas are enough for the head.

Cardamom

It also belongs to the relatives of ginger and also warms well. It also has excellent antiseptic properties and helps to defeat many colds, protecting our lungs, throat and bronchi.

Mulled wine set: other components and products

Egg

Do not wonder. If you mix it well with sugar, then it will perfectly complement mulled wine with white semi-sweet wine. But here it is especially important not to let the wine boil - after all, it will necessarily curdle.

Nutmeg

It helps improve digestion and increases appetite. It is put in a little bit of mulled wine, because its aroma and taste are too strong.

Tea

Usually there is not much of it in mulled wine. Most often it is black tea, much less often - hibiscus. Coffee is added even less often.

Other alcoholic drinks

If you include cognac or gin in a mulled wine set, it will become even more heady, or it can be rum. The main thing is to add no more than 25 ml of them - also for the scent.

Berries

Why not? Raspberries for aroma, raisins for sweetness, cranberries for astringency. Try it!

This drink will turn out to be less strong, but very tasty. And for this you need a glass of half a liter of wine (red), two star anise stars, two tablespoons of ground cinnamon, a small spoonful of ginger, 5 pieces of cloves and allspice, one orange, half a lemon, 50 grams of brown sugar and a few cardamom seeds. The amount of spices can be changed at your discretion. Pour the strained tea into a saucepan and add all the spices. Bring the mixture to a boil and simmer for about 10 minutes. Then add the chopped fruit, and after a minute pour in the wine. We do not boil mulled wine, but only warm it up. We pour the drink into glasses and serve to the guests.
