To fill pies, be sure to use pitted cherry jam. If desired, add other products to the jam - applesauce, spices, nuts or beaten egg whites.

Ingredients:

  • a pack of margarine (180-200 g);
  • four eggs;
  • 125 ml milk;
  • four tbsp. l. Sahara;
  • a spoonful of yeast (full);
  • a teaspoon of salt (and another pinch);
  • 1-2 g lemon zest;
  • 600-700 g wheat flour (white);
  • 220 g cherry jam;
  • 9-10 walnut kernels.

Step-by-step recipe for pie with cherry jam

Rinse the eggs in water and crack them into a bowl. Immediately separate the whites from the yolks. The whites will go into the filling, and the yolks into the dough.

In a saucepan, heat a mixture of milk, margarine, a spoonful of salt and sugar (2 tablespoons). Add egg yolks and dry yeast. Stir and add some of the flour. While kneading the dough, gradually add all the flour to it. Then leave the lump on the table under a towel or film for an hour.

Roast the walnuts in a dry frying pan and peel off the dark film. Then grind the white, clean kernels in a blender until crumbly.

Beat the egg whites with a pinch of salt and lemon zest into a thick foam. Pour the remaining sugar into the mixture in a thin stream. Gently stir in walnuts.

Place a layer of baking parchment in a baking pan.

Airy protein pie is a low-calorie, delicious dessert. You can prepare it at any time to please yourself and your loved ones. And to speed up the cooking even more, use applesauce or thick jam instead of a fresh apple.

Ingredients:

  • 8-9 tbsp. l. cherry jam;
  • one large apple (sour to taste);
  • a pinch of salt;
  • five egg whites;
  • 5-10 g butter.

How to cook

Wash the apple and pack in food foil. Place the glossy side of the foil inward. Bake the apple in the oven at 220˚C for a quarter of an hour. Then remove the apple and puree the pulp with a blender.

Separately, beat the cherry jam until smooth. Combine it with applesauce. Leave the mixture to cool at room temperature.

Mix chilled egg whites with salt. Start beating them at first speed of the mixer. As the mass thickens, move to the second and third speed. The pie requires a thick, stable protein mass. Then mix the whites with the fruit and berry mixture.

Grease the mold with butter and place the dough into it. Flatten and place in the oven at 180˚C for 40-50 minutes.

You don’t need to bake the apple for the recipe. Grate its pulp and mix with a drop of lemon juice. Boil in a saucepan for a couple of minutes and use this mixture for the filling. You can also add chopped chocolate, vanilla, ground nuts or sunflower seeds to the cherry jam to taste.

Option 3: Pie with cherry jam - “Sweet balls”

Balls of yeast dough with filling are made small or large. The appearance of the finished pie depends on this. But a more neat and appetizing pie is made from many small balls of dough.

Ingredients:

  • 630 g wheat flour (white);
  • a couple of tablespoons of starch (from potatoes);
  • two tsp. dry yeast;
  • 4 tbsp. spoons of sugar;
  • a couple of spoons of margarine;
  • a spoonful of milk (not full);
  • a couple of pinches of salt;
  • for cherry jam filling;
  • two chicken eggs;
  • butter for greasing the mold.

How to cook

Sift the flour and starch through a sieve. If you don't have potato starch on hand, but have cornstarch, use it.

In one bowl, mix warm milk with melted margarine, sugar and salt. Pour in the yeast and add the egg. Whisk a little to break up the egg. Add half a kilo of flour. Mix the mixture with your hands until you get an elastic dough. If desired, you can continue kneading directly on the table. Leave the dough to mature for 40 minutes in a bowl under a towel.

Then divide the dough into approximately equal pieces - 10-12 pieces. You can make smaller or slightly larger pieces. Roll each piece into a ball and then knead into a flat cake. Place a little filling on the flatbreads so that each has approximately the same amount of jam. Close the cakes into patties and form balls again.

Grease a baking sheet with oil or line it with parchment. Place the balls on it one by one so that a whole pie comes out.

Separately, beat the egg and brush the top of the pie with it. Leave the pie warm for half an hour - it should rise significantly - the dough will ripen.

Place in the oven at 180-200˚C for 50-55 minutes.

Never place the pie in a cool or lukewarm oven. Otherwise, the bottom of the dough will burn and the top will remain raw. To make the pie more original and interesting, cover it on top with a layer of sweetish soft Mascarpone cheese.

Option 4: Pie with cherry jam from crackers

This is an easy way to make a pie - there is no dough at all. It's impossible to ruin a rusk pie! In addition, the filling for it is suitable not only from cherries, but also any other - pieces of fresh fruit or even vegetables. For example, pieces of zucchini or pumpkin with honey or sugar.

Ingredients:

  • four large eggs;
  • four tbsp. l. Sahara;
  • two tbsp. crackers;
  • 150 g cherry jam;
  • a spoonful of butter;
  • salt;
  • a pinch of ground cinnamon;
  • a pinch of nutmeg.

Step by step recipe

Divide the cooled eggs into whites and yolks. Beat the yolks with sugar and cinnamon. Mix with bread crumbs. You can make them yourself from dry pieces of bread or use ready-made store-bought ones.

Beat the egg whites with a pinch of salt with a mixer until they form a stable, thick foam. Quickly stir into the yolks. Try to stir with a spatula from bottom to top.

Combine the jam with nutmeg.

Turn on the oven at 180˚C and take care of the baking sheet. Grease it with butter. Spread half the mixture with breadcrumbs. Then spread the jam in an even layer. And again the dry mass.

Place in the oven to bake for 30-35 minutes.

If desired, you can make crackers yourself, and not only from wheat bread. But also from rye or from a mixture of various stale pieces.

Option 5: Pie with cherry jam in the form of bannitsa on cottage cheese

The recipe is vaguely similar to the traditional Bulgarian bannitsa pie. But the dough will be formed in the usual way - two layers of dough, filling between them.

Ingredients:

  • 820 g wheat flour (white);
  • 260 g soft cottage cheese;
  • 5 tbsp. l. fat sour cream;
  • a spoonful of milk;
  • ¼ tsp. citric acid;
  • 50 ml butter;
  • 210 g cherry jam (pitted).

How to cook

Grind the milk thoroughly with cottage cheese, add sour cream and citric acid. The latter should dissolve. Then add the flour sifted in advance in portions. The dough should come out thick, elastic and soft. Place the lump under the film on the table for half an hour to stand and ripen.

Divide the dough into two parts. Roll both into layers along the diameter of a round shape. You can also take a square baking sheet - this is up to the hostess to choose. Grease the mold with butter - use 5-10 g of butter.

Place the first layer in the mold - form the sides. Place jam in them. If you have liquid jam, you can strain it through a sieve and then only the berries will remain. Cover with a second layer and secure the sides. You can decorate them figuratively - twist them into a pigtail or something else.

Melt the remaining butter and pour it over the pie. Make small cuts in the center or along the edges with a knife to allow steam to escape. Without them, the pie will burst and the filling will leak out.

Place the workpiece to bake at 180-200˚C.

The same cake can be formed in another way. Roll out the dough into an even thickness. Cover it with jam and roll it up. Then roll it into a “snail” shape and place it on a baking tray. Add the eggs to the butter and sugar and beat with a mixer at low speed.

At this stage it is important to thoroughly beat our shortbread dough. You need to beat for about 10-15 minutes, first at low speed, and then at high speed. As a result, you should get a homogeneous, thick mixture, almost white.

TIP: The flour must be sifted and this is not done in order to remove debris from it, but rather so that the flour is enriched with oxygen. As a result of this simple action, your product will turn out more airy and fluffy.

Now, gradually add flour to the liquid mass (2-3 tablespoons each), stirring the mass each time until smooth.

When it becomes difficult to stir with a spoon, put the shortbread dough on the table and knead it with your hands.

Divide the finished dough into 2 parts and place one part in the freezer for 1 hour.

    Cherry pie “Childhood in the village”

    Ingredients

    • cherry jam (seedless) – 450 gr.;
    • premium wheat flour – 500 gr.;
    • water – 60 g;
    • creamy margarine or butter – 200 gr.;
    • whole milk – 100 ml;
    • granulated sugar – 250 gr.;
    • salt – 5 g;
    • eggs – 3 pcs.;
    • baking powder – 30 g;
    • vanillin – 10 g;
    • wine or apple cider vinegar – 10 ml.

    Preparation

    1. If your cherry jam is thick enough, add water and a little sugar (50 g) to it. Place on the stove and simmer over low heat until the berries soften and the water evaporates a little.
    2. Turn on the oven as the dough cooks very quickly. It should heat up to a temperature of 180º. Grease a baking sheet with butter or margarine and sprinkle with a little flour so that the cake comes off easily after baking.
    3. Butter or margarine should be soft. Transfer it to a container, add sugar, salt and beat until smooth.
    4. Add the egg yolks to the butter mixture and continue beating. Add vanillin and repeat the process.
    5. Combine flour with baking powder and mix. Gradually add milk, constantly stirring the mixture.
    6. Combine both masses and mix until smooth.
    7. In a separate container, combine the whites and vinegar. Beat until the whites become a homogeneous white suspension, but not until foamy.
    8. Add the protein suspension to the flour mixture and mix thoroughly. The dough will be viscous, but there is no need to add flour.
    9. We transfer the dough into a pie pan and level it with a wet spoon, pressing it a little in the middle, forming “sides,” as it were.
    10. Spread jam on top. You can sprinkle with cinnamon sugar or chopped nuts.
    11. Bake until done at original temperature. The best way to check the readiness of the pie is with a thin wooden stick (toothpick or match). If the dough does not stick to it when we pierce the pie, then it is ready.

    Remove the finished pie with cherry jam from the mold when it is cold. This way you will be sure that it will not fall apart, and it will be much easier to get it out. You can add additions to this recipe - sprinkle nuts or coconut on top.


    Ingredients

    • pitted cherry jam or jam – 300 gr.;
    • creamy margarine – 150 gr.;
    • eggs – 3 pcs.;
    • powdered sugar – 150 gr.;
    • flour – 200 gr.;
    • salt – 5 g;
    • soda – 4 g;
    • vinegar – 5 gr.;
    • vanilla - to taste.

    Preparation

    1. Take a bowl with high edges and pour powdered sugar, softened margarine and vanilla into it. Beat with a mixer until a creamy mass is obtained.
    2. Add the eggs and beat again until smooth and foamy.
    3. Pour vinegar into a small cup or shot glass and add the foamy mixture to the dough.
    4. Then gradually add flour in portions, constantly running the mixer at the lowest speed. The amount of flour may vary - you must adjust it yourself during the cooking process. It depends on the fat content of the margarine, the moisture content of the flour itself, and the size of the eggs. Your dough should be soft, silky and not thick in consistency (thicker than thick sour cream).
    5. Grease a baking tray with butter and sprinkle with a little flour. Place the dough into it and level it with a spoon, making a small depression in the center.
    6. Spread cherry jam on top so that the entire surface of the pie is covered.
    7. The oven should already be preheated to 180º. You need to bake the cake in it for about half an hour.
    8. After baking, remove from the oven and leave the finished cherry pie for 20 minutes to cool slightly. This way it will come out of shape better.

    This recipe does not require preparing separate parts of the dough. All ingredients are combined one by one in one container.

    The dough is prepared very quickly, even less than it takes to bake the pie itself.


    Ingredients

    • cherry jam – 200 gr.;
    • kefir – 200 ml;
    • eggs – 2 pcs.;
    • powdered sugar – 100 gr.;
    • flour – 250 gr.;
    • soda – 15 gr.

    Preparation

    1. Place the jam in an enamel container and add soda to it. Mix thoroughly and leave for a while so that the soda reacts with the acid that is in the jam. It is important that such a reaction occurs and the mass increases in volume, otherwise the dough will not rise during baking or “fall.”
    2. While the jam reacts, beat the eggs with sugar. There is no need to achieve a tight foam. Simply foam the mixture so that the sugar dissolves a little.
    3. Add kefir to the eggs and mix the resulting mixture.
    4. Add flour to the liquid mixture in small portions and beat with a mixer or whisk. It is necessary to achieve uniformity and absence of lumps. The thickness of the dough will be like thick sour cream.
    5. At the very last moment, add the jam (at least 10 minutes must pass from the moment the soda is added to it). Stir until the jam is evenly distributed throughout the dough.
    6. Prepare the baking dish - grease it with butter and sprinkle with flour. Pour the dough into the mold and level it with a spoon.
    7. The oven should already be heated to a temperature of 150-160º. You need to bake the pie for about half an hour. Check the degree of readiness with a bamboo stick. We make a hole in the center of the pie all the way to the bottom. If the stick comes out wet, increase the baking time.
    8. Remove the finished pie from the oven and leave to cool for a while. We take it out of the mold and decorate it. You can simply dust the top with powdered sugar. This should be done with the pie still warm.

    You can cut the already cold pie into two layers and spread with sour cream or butter cream. Or maybe just jam.

    The recipe for such a pie requires the use of well-cooked sour berry jam.

    When baking pies with cherry jam according to these recipes, it is important not to open the oven for the first 20 minutes so that the dough does not stop rising. Otherwise, the pie will turn out unbaked.

    If you want to use a recipe in which jam is added directly to the dough, then you can use blackcurrant, lingonberry, plum, strawberry, and blueberry jam. They should be well cooked, fairly viscous in texture, with a thick syrup.

    Pie with cherry jam is a wonderful dessert for tea, milk or kefir. Its baking time is quite short, and the recipes are very simple. This makes it possible to please your household with such a pie almost every day.

    • egg – 2 pcs.;

Then add the butter, mix with a fork and gradually add flour. Knead a loose, soft dough, wrap it in a plastic bag and put it in the cold for 1 hour. Next, divide it into 2 unequal parts and place the larger one in the multicooker bowl. We spread the dough along the bottom with our hands and climb out a little onto the sides of the pan. Now pour in the pitted cherry jam, level it with a spoon and throw in the rest of the dough, grated into crumbs, on top. Close the lid and cook the pie for 70 minutes on “Baking”. After the ready signal, carefully remove the dishes, cool, and then carefully remove the pie.

    Puff pastry pie with cherry jam

    Ingredients:

    • puff pastry without yeast - 1 pack;
    • cherry jam – 200 g;
    • egg – 1 pc.;
    • potato starch – 10 g;
    • sugar – 110 g;
    • sesame seeds, nuts or powdered sugar - for decoration.

    Preparation

    To whip up a pie with cherry jam, first defrost the dough, then unroll it and place it on a table dusted with flour. Roll out with a rolling pin into a thin rectangular layer. We make small horizontal cuts on both sides with a knife. Place cherry jam in the middle and sprinkle it with potato starch. We wet our hands with water and gently pull the cuts, alternating and laying them on top of the berries, as if braiding a pigtail. Break the egg into a bowl, add a little sugar, mix with a whisk and coat the surface of the pie with the sweet mixture. If desired, sprinkle it with sesame seeds or chopped nuts. Place the delicacy on an oiled baking sheet and bake for 20 minutes at 180 degrees. After this, carefully remove it and cool it.
